1 pound ripe yellow tomatoes
1 pound ripe red tomatoes
1/4 cup minced red onion
2 tablespoons minced fresh dill
2 tablespoons chopped fresh oregano leaves
2 teaspoons fresh thyme leaves
2 tablespoons light olive oil
1 teaspoon agave nectar (possible source: health food stores)
Salt and freshly ground pepper to taste
Dice the tomatoes into 1/2-inch or smaller. Combine with the remaining ingredients in a serving bowl.
Stir together, and serve at once.
Makes about 1 1/2 cup.
