Mango Salsa – 2

Ingredients
- 1 tablespoon safflower oil
- 1 large onion finely chopped
- 2 pieces jalapeno finely chopped
- 2 large mangos finely chopped
- 2 large tomatoes finely chopped
- 2 medium limes juiced
- 1 tablespoon brown sugar
- 1 pinch salt
- 1 pinch black pepper
Instructions
- Heat the oil on medium-high in a small sauce-pan and cook the onion and chile until translucent and soft, about 5 minutes. Add the mangoes and tomatoes and simmer slowly under cover for another 30 minutes. Add the lime juice and sugar, season to taste.
- Enjoy hot or chilled.
