Ingredients

  • 1 tablespoon safflower oil
  • 1 large onion finely chopped
  • 2 pieces jalapeno finely chopped
  • 2 large mangos finely chopped
  • 2 large tomatoes finely chopped
  • 2 medium limes juiced
  • 1 tablespoon brown sugar
  • 1 pinch salt
  • 1 pinch black pepper

Instructions

  • Heat the oil on medium-high in a small sauce-pan and cook the onion and chile until translucent and soft, about 5 minutes. Add the mangoes and tomatoes and simmer slowly under cover for another 30 minutes. Add the lime juice and sugar, season to taste.
  • Enjoy hot or chilled.
