Apple Cake

1/4 cup sugar
2 teaspoons cinnamon
1 cup vegetable oil
2 cups sugar
3 cups flour
4 eggs
3 teaspoons baking powder
2 1/2 teaspoons vanilla
1/4 cup orange juice
4 medium apples, peeled, cored and sliced

Preheat oven to 350°F. Grease and flour a tube pan, not a bundt pan.

Mix 1/4 cup sugar and 2 teaspoons of cinnamon and set aside. Mix the next 7 ingredients in a mixer bowl and beat well.

Pour half in the pan, top with half of the sliced apples and sprinkle with half of the sugar and cinnamon mixture. Pour in remaining batter, apples and sugar-cinnamon mixture.

Bake for 1 1/2 hours or until done. Cool for 30 minutes on a wire rack, then remove from pan and cool completely.
