These herbed potatoes are a great side dish for a holiday or any day!

Ingredients

  • 12 new potatoes cut in half or quartered depending on size
  • 3 tablespoons olive oil
  • 2 cloves garlic coarsely chopped
  • 1 dash salt
  • 1 dash black pepper freshly ground
  • 1 tablespoon cilantro finely chopped
  • 1 tablespoon flat leaf parsley finely chopped
  • 1 tablespoon chives finely chopped

Instructions

  • Preheat oven to 375°F.
  • Toss potatoes with olive oil, garlic, and salt and pepper, to taste. Place in a small roasting dish and roast until cooked through and golden brown. About 45 to 50 minutes.
  • Remove from oven and immediately fold in the herbs.
