Ingredients

  • 6 large tomatoes sliced or cut into wedges
  • 1/4 cup spring onion chopped
  • 1/4 teaspoon black pepper
  • 1 clove garlic minced
  • 2/3 cup salad oil
  • 1/4 cup vinegar
  • 1 teaspoon salt
  • 1/2 teaspoon thyme

Instructions

  • Put tomatoes in a bowl. Shake together remaining ingredients in a jar; pour over tomatoes and let marinate for at least 1 hour.
  • Serves 6
