- 2 cups artichoke hearts canned
- 1/2 cup celery chopped
- 1/2 cup green onions and tops chopped
- 1 cup mayonnaise
- 6 large tomatoes
- 2 slices bacon cooked
- 6 Lettuce leaves
Chop artichoke hearts and combine with celery, green onions and mayonnaise. Peel and scoop out 6 tomatoes and stuff with vegetable mixture.
Place on lettuce leaves and sprinkle with bacon.
