Blackberry Jam Cake

Ingredients
- 1 cup butter at room temperature
- 2 cups sugar
- 1 teaspoon vanilla
- 5 large eggs at room temperature
- 1 cup buttermilk at room temperature
- 2 teaspoons baking soda
- 4 cups flour
- 1/2 teaspoon salt
- 1 teaspoon allspice
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/2 teaspoon nutmeg
- 1 cup raisins
- 1 cup nuts
- 2 cups blackberry jam
Caramel Frosting
- 1/2 cup butter
- 1 cup dark brown sugar firmly packed
- 1/4 teaspoon salt
- 2 cups confectioners’ sugar
Instructions
- Preheat oven to 350°. Grease and flour four 8-inch or 9-inch cake pans, or line them with parchment paper.
- Combine buttermilk and baking soda; set aside. Sift together flour, salt, and spices; set aside.
- Cream butter, sugar, and vanilla until light and fluffy. Add the eggs one at a time, beating well and scraping the bowl after each addition. To the butter mixture, add half the flour mixture and mix until combined. Add half the buttermilk mixture and mix until combined. Add the rest of the flour mixture and mix; then add the rest of the buttermilk and mix. Scrape the bowl and mix well.
- Add raisins, nuts, and jam; mix well.
- Bake in preheated oven until edges of cake layers are just starting to pull from sides of pans and a wooden pick inserted in center comes out clean, 35 to 40 minutes, rotating pans from top to bottom rack halfway through baking. Press gently on top of layers to flatten any doming; cool in pans 10 minutes. Remove from pans to wire racks; cool completely, about 1 hour.
Caramel Frosting
- Melt butter over low heat. Stir in brown sugar and salt. Bring to a boil over medium heat; boil hard 2 minutes stirring constantly. Remove from heat, cool to lukewarm.
- Stir in confectioners’ sugar & beat until smooth.
- If frosting is too thick, beat in a little milk.

Comment This sounds like a nice cake. Does it make 2 x 2 layered cakes? What is the frosting that is pictured on the accompanying photo? Thanks
Hi, Thanks for your questions.
Yes it does make 2 cakes 2 layers each. I went back and added the Caramel Frosting that is pictured. While doing so I also noted a complete paragraph missing to the recipe. That too has been fixed.
I’m doing updates to the recipe scripts and my website is a mess.
