Ingredients

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 2 large eggs
  • 3/4 cup light brown sugar
  • 1/2 cup unsalted butter melted
  • 2 bananas mashed
  • 1 teaspoon vanilla
  • 1/2 cup walnuts chopped
  • 3/4 cup low fat granola without raisins, lightly crushed

Instructions

  • Heat oven to 350°. Coat 3 loaf pans with cooking spray.
  • In a bowl, whisk together flour, baking powder, cinnamon and salt. Make a well in the center of the dry ingredients, set aside.
  • In a medium bowl, combine egg, brown sugar and butter. Whisk until smooth. Add mashed banana and vanilla.
  • Pour banana mixture into well of dry ingredients. Stir until moist. Stir in walnuts. Divide batter among the pans. Sprinkle granola over all pans.
  • Bake 33 minutes or until set and golden around the edges. Let the loaves cool in the pans 5 minutes. Transfer to rack, serve warm.

Notes

This batter may also be prepared as 12 standard muffins. Reduce baking time to 25 minutes
Makes 3 Loaves, 6 Slices Per Loaf Or 12 Muffins.
