Banana Crunch Loaves

Servings: 18 slices
Ingredients
- 2 cups flour
- 2 teaspoons baking powder
- 1/2 teaspoon cinnamon
- 1/2 teaspoon salt
- 2 large eggs
- 3/4 cup light brown sugar
- 1/2 cup unsalted butter melted
- 2 bananas mashed
- 1 teaspoon vanilla
- 1/2 cup walnuts chopped
- 3/4 cup low fat granola without raisins, lightly crushed
Instructions
- Heat oven to 350°. Coat 3 loaf pans with cooking spray.
- In a bowl, whisk together flour, baking powder, cinnamon and salt. Make a well in the center of the dry ingredients, set aside.
- In a medium bowl, combine egg, brown sugar and butter. Whisk until smooth. Add mashed banana and vanilla.
- Pour banana mixture into well of dry ingredients. Stir until moist. Stir in walnuts. Divide batter among the pans. Sprinkle granola over all pans.
- Bake 33 minutes or until set and golden around the edges. Let the loaves cool in the pans 5 minutes. Transfer to rack, serve warm.
Notes
This batter may also be prepared as 12 standard muffins. Reduce baking time to 25 minutes Makes 3 Loaves, 6 Slices Per Loaf Or 12 Muffins. Times are approximate. Nutritional values listed may vary from final results depending on actual measurements and brands used to prepare the recipe.
