Baked Apples

Servings: 4
Ingredients
- 4 Fuji or MacIntosh apples
- 2 teaspoons lemon juice
- 6 teaspoons golden raisins
- 4 teaspoons brown sugar
- 2 teaspoons ground cinnamon
- vanilla extract
- 1/2 cup apple juice rum or sherry
- light whipped cream or light vanilla ice cream
Instructions
- Preheat oven to 350°.
- Core each apple but do not cut through, so that the bottom remains intact. Remove 1/2 inch of the peel at the top of the apple.
- Place apples in a baking dish and sprinkle with the lemon juice. Fill centers with raisins and brown sugar. Drizzle with vanilla extract and sprinkle with cinnamon. Pour apple juice, rum or sherry into bottom of the dish.
- Bake for 30-35 minutes, basting several times during cooking.
- Let stand for 3 minutes, then top with light whipped cream or vanilla ice cream.
