1 1/2 lbs. Brussels sprouts
1 lb. sliced bacon, cut into 3/4″ pieces
1 medium onion diced
3/4 teaspoon salt
1/2 teaspoon pepper
Over medium-high heat bring pot of salted water to a boil. Add Brussels sprouts; cook 3 minutes. Drain; reserve.
In large skillet over medium-high heat cook bacon until crisp, about 7-8 minutes. Remove bacon with slotted spoon; drain on paper towels.
Discard all but 3 tablespoons drippings from skillet. Add onion; cook until softened, about 6 minutes. Add Brussels sprouts, salt and pepper; cook until heated through, 2-3 minutes.
Serve tossed with bacon.
