2large egg yolks
1cupsour milkor buttermilk
4 1/2cupsregular flour
1cupHershey's powdered cocoa
2large egg whites stiffly beaten
Combine all ingredients in the order listed with a hand-mixer.....do not over mix, just mix until well combined
Drop by heaping teaspoonfuls onto greased cookie sheet....or use parchment paper; you should have 36 cookie halves
Bake at 400°F for 8 minutes and cool completely
Combine beaten egg whites and slowly add remaining ingredients...vanilla, flour, milk, sugar and Crisco.
Spread filling over 18 cookies about a half inch thick and gently cover with the other half
