Whoopie Pies

Servings: 18 cookies
Ingredients
- 2 cup granulated sugar
- 1 cup shortening Crisco regular
- 2 large egg yolks
- 1 cup sour milk or buttermilk
- 2 teaspoons vanilla extract
- 2 teaspoons iodized salt
- 2 teaspoons baking soda
- 1 cup hot water
- 4 1/2 cups regular flour
- 1 cup Hershey's powdered cocoa
Filling:
- 2 large egg whites stiffly beaten
- 2 teaspoons vanilla extract
- 4 tablespoons flour
- 4 tablespoons milk regular whole
- 4 cups powdered sugar
- 1 cup shortening Crisco
Instructions
Whoopie Pies:
- Combine all ingredients in the order listed with a hand-mixer.....do not over mix, just mix until well combined
- Drop by heaping teaspoonfuls onto greased cookie sheet....or use parchment paper; you should have 36 cookie halves
- Bake at 400°F for 8 minutes and cool completely
Filling:
- Combine beaten egg whites and slowly add remaining ingredients...vanilla, flour, milk, sugar and Crisco.
- Spread filling over 18 cookies about a half inch thick and gently cover with the other half
