Vanilla Sprinkles Cupcakes

1/4 cup unsalted butter
1 1/2 cups sugar
3 eggs
1 1/2 teaspoons vanilla
2 1/2 cups cake flour
2 1/2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup milk

Frosting
1 cup unsalted butter
3 teaspoons vanilla
2 1/2 cups powdered sugar
Assorted colors of food coloring
Colored sprinkles

In a bowl, cream butter and sugar until fluffy. Add eggs, beat well. Beat in vanilla.

In another bowl, mix flour, baking powder and salt, add to creamed mixture alternately with milk, beat well.

Fill paper lined muffin cups. Bake at 350 degrees for 22 minutes or until done. Cool in pans 10 minutes. Remove.

For frosting—In a bowl, beat butter and vanilla until blended. Beat in powdered sugar until smooth. Tint with food colorings. Frost cupcakes. Decorate with sprinkles, then serve.

Makes 2 dozen.
