Vanilla Brandy Sweet Potatoes

- 2 quart casserole dish
- small saucepan
- large wooden stirring spoon
- measuring cups and spoons
Ingredients
- 3 medium sweet potatoes about 1-1/4 lb total, peeled and sliced thin
- 2 cups orange juice
- 2 teaspoons honey
- 1 vanilla bean split
- 1/4 cup brandy
- 2 teaspoons grenadine
- 1 tablespoon cornstarch or arrowroot powder
- 2 tablespoons water
Instructions
- Preheat the oven to 350°F.
- Place the sweet potatoes in a casserole dish.
- In a small saucepan over medium heat, add the orange juice, honey, vanilla bean, and brandy. Bring to a boil. Add the grenadine.
- Mix together the cornstarch or arrowroot powder with the water. Add to the sauce. Cook over low heat until thickened. Pour the sauce over the potatoes and bake, covered, for 45-60 minutes.
