Angel Chicken Pasta

6 skinless, boneless chicken breast halves
1/4 cup butter
1 (.7 ounce) package dry Italian-style salad dressing mix
1/2 cup white wine
1 (10.75 ounce) can condensed golden mushroom soup
4 ounces cream cheese with chives
1 pound angel hair pasta

Preheat oven to 325°F (165°C).

In a large saucepan, melt butter over low heat. Stir in the package of dressing mix. Blend in wine and golden mushroom soup. Mix in cream cheese, and stir until smooth. Heat through, but do not boil.

Arrange chicken breasts in a single layer in a 9x13 inch baking dish. Pour sauce over.

Bake for 60 minutes in the preheated oven. Twenty minutes before the chicken is done, bring a large pot of lightly salted water to a rolling boil.

Cook pasta until al dente, about 5 minutes. Drain. Serve chicken and sauce over pasta.

Herbed Russet Potatoes

6 medium russet potatoes, washed, unpeeled, and cut in half lengthwise
1 tablespoon olive oil
1 tablespoon white wine
2 tablespoon low-fat, low-sodium chicken broth
2 teaspoons minced fresh thyme
1 teaspoon minced fresh rosemary
fresh ground pepper to taste

Add the potatoes to a large pot of boiling water and boil for about 10-15 minutes, just until potatoes are slightly tender and not too soft. Drain.

In a large glass dish, combine the remaining ingredients. Add the potatoes and marinate for 30 minutes.

Prepare an outside grill with an oiled rackset 4 inches above the heat source. On a gas grill, set the heat to high. Grill each potato half directly on the rack or in an oiled, wire-hinged vegetable basket, turning constantly, for 15-17 minutes until the potatoes are cooked through.

1 lemon, peeled and quartered
1 shallot, minced
1/4 cup white wine
1 bay leaf
1 1/2 teaspoons whole black peppercorns
2 cups unsalted butter, cut into pieces
1 1/2 teaspoons. salt
1/4 teaspoon white pepper

Combine lemon, shallot, white wine, bay leaf, and peppercorns in heavy saucepan. Reduce liquid over low heat until mixture is almost dry.

Strain liquid, removing bay leaf, peppercorns, and any large lemon particles.

Whisk butter, one piece at a time, into strained lemon mixture. Let butter melt before adding additional pieces. Do not allow mixture to boil, as butter will break down. Add salt and pepper.

Serve over crab or fish cakes.

Persian Pomegranate Glazed Chicken

2 cups pomegranate juice
1/4 cup white wine
1 tablespoon molasses
2 tablespoons honey
1 lemon, juiced
2 tablespoons finely minced onion
2 teaspoons garlic cloves, finely minced
1 tablespoon fresh mint leaves, finely minced
8 skinless chicken breasts, bone-in
Salt and freshly ground pepper
Mint leaves, for garnish
Pomegranate seeds, for garnish

Persian Spice Rub:

2 teaspoons ground coriander
1 teaspoon ground cumin
1 teaspoon ground turmeric
1 teaspoon ground allspice

Preheat oven to 375°.

Combine pomegranate juice, molasses, white wine, honey, lemon juice, onion, garlic, and mint in medium saucepan over medium heat. Bring to a boil and reduce to glaze consistency. Place about 1/3 of glaze in a separate bowl and reserve.

Season chicken with salt and pepper and Persian Spice Rub. Generously brush with glaze from saucepan and place chicken on a baking sheet lined with foil, skin side down, and bake for 10 minutes. Turn chicken oven and brush with glaze. Bake for 10-15 more minutes, or until chicken is cooked through.

Place breasts on a large serving platter and drizzle with reserved glaze. Garnish with mint leaves and pomegranate seeds.

Persian Spice Rub: Combine coriander, cumin, turmeric, and allspice in a small bowl. Mix well to combine.

Baked Shrimp

1 lb. large shrimp
1 stick margarine
1 cup white wine (optional)
2 tablespoons lemon juice
Black pepper, to taste
4 large cloves garlic
1 cup olive oil
1/2 teaspoon salt
Chopped parsley, dry or fresh

Crush garlic in bowl and add olive oil. Mix together and set aside.

Wash and place shrimp in an oblong baking dish. Sprinkle liberally with black pepper and sprinkle with salt. Dot tops of shrimp with margarine.

Add olive oil, garlic, wine, lemon juice and sprinkle parsley on top.

Cover with aluminum foil and bake at 350° for 30 minutes or until shrimp are cooked.

Shrimp do not have to be deheaded.

Flounder Ala Lemone

4 Flounder Steaks
Flour
1 egg
Salt
Oil
2 tablespoons butter or margarine
1/4 cup chicken stock or bouillon
1/2 lemon
1/4 to 1/2 cup white wine

Toss flounder steaks in flour. Dip each piece in beaten egg with a pinch of salt.

Fry fish in a little oil, lightly on both sides. Drain on paper towel. Wipe excess oil from fry pan.

Put butter and chicken stock in fry pan. Return fish to pan after butter has melted. Squeeze lemon and pour wine over fish. Add salt to taste. Cook until fish flakes easily with fork.

1/2 cup microwaveable brown or long-grain rice
1 tablespoon vegetable oil
3 cloves garlic, minced
1 onion, minced

1 to 2 cups cooked chicken
1 cup corn, frozen or canned
1/4 cup white wine
1 tablespoon herbes de Provence or dried herb blend of your choice

Cook the rice in the microwave according to package directions.

Meanwhile, heat the oil in a large saucepan over medium-high heat; add the garlic and onion. Cook, stirring, until golden, about 5 minutes.

Add the broth, tomatoes, chicken, corn, the rice, wine, herbs, red pepper flakes and pepper to taste. Heat to a boil; lower heat and simmer 5 minutes.

2 tablespoons white wine, set aside
1/2 cup bourbon whiskey

Butterflied Lobster with Curry Butter

5 (1 1/2-pound) lobsters, par-steamed and butterflied
Olive oil
Salt and freshly ground pepper
Curry Butter
2 tablespoons olive oil
1/2 small Spanish onion, finely chopped
3 cloves garlic, finely chopped
3 tablespoons Madras curry powder
1 cup white wine
3 sticks unsalted butter, slightly softenend
Salt

Heat grill to high. Brush the cut side of the lobster with oil and season with salt and pepper. Grill, cut-side down until golden brown, and just cooked through. Flip for 45 seconds to just heat through.

Remove from the grill and slather with curry butter.

Curry Butter

Heat oil in a small saucepan on the grates of the grill or on the side burners. Add onions and garlic, curry powder and wine and cook until reduced, about 30 minutes. Strain. Place the butter in a bowl, add the curry mixture and mix until well combined, season with salt.
