Low Sugar Sweet and Sour Sauce

Ingredients

    Low Sugar Sweet and Sour Sauce
  • 1 cup ketchup
  • 1 cup diet coke
  • 1/4 cup vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch

Mix first four ingredients in a large saucepan. Cook, stirring occasionally, 15 minutes, or until mixture reaches desired color and consistency.

Thicken with cornstarch.

Notes Pour over ribs, meatballs, etc.

  • 3 lb. chicken wings
  • 1 cup packed brown sugar
  • 1/4 cup water
  • 1 tablespoon soy sauce
  • 1/3 cup vinegar
  • 1/4 cup catsup

Cut chicken wings into 3 pieces, discarding the tip portion.

Bake at 400º F. For 20 minutes or until brown and crispy.

Combine brown sugar, water, soy sauce, vinegar, catsup, and a pinch of salt in a bowl and mix well. Pour over chicken.

Bake 20 – 30 minutes longer.

Makes 6 to 8 servings.

  • 1/2 cucumber, peeled, seeded and grated
  • 1/4 teaspoon salt
  • Dijon style mustard
  • 1 tablespoon vinegar
  • salt and pepper to taste
  • 1/2 cup sour cream
  • 1/4 cup plain yogurt
  • 1 tablespoon snipped fresh dill

In a small sieve set over a bowl, toss cucumber with salt and let drain 10 minutes.

In a blender, blend mustard, salt and pepper to taste. Add sour cream, yogurt and fresh dill. Blend the mixture, scraping down the sides until it is smooth. Add the cucumber and blend until combined.

  • 8 to 10 black mushrooms
  • Oil for frying
  • Chinese parsley, lettuce or any salad green vegetables
  • 3 tablespoons cornstarch
  • 1 teaspoon salad oil
  • 1 tbsp. soy sauce
  • 4 slices ginger, 1/16 inch thick x 1 inch sq.
  • 1 1/2 teaspoons vinegar
  • 1 tablespoon sugar
  • 1 1/2 teaspoon five spice powder
  • 1 teaspoon sesame oil
  • M.S.G. (optional)

Soak mushrooms in hot water until soft; remove stems. Cut mushrooms with scissors in a spiral path 1/4 inch wide so that mushrooms will be in long strips resembling eels. Dredge mushrooms thoroughly in cornstarch, covering them completely.

Heat oil. Fry mushrooms until golden in color; drain.

Make a soft bed of greens for mushrooms. Heat oil and pan-fry mushroom stems and ginger to extract the flavor of the stems and ginger; discard cooked matter and save oil. Add soy sauce, vinegar, sugar, five spice powder, sesame oil, M.S.G. and mushrooms. Stir-fry for 1 to 2 minutes.
