Ingredients

1 cup unsweetened fruit (peaches, raspberries or strawberries)
1 ripe banana, sliced
1 (8 ounce) carton (1 cup) plain yogurt*
3/4 cup orange juice
1/2 cup crushed pineapple, drained
1/3 cup honey

Instructions

In blender, combine all ingredients. Process at medium speed until smooth and creamy. (Sherbet can be mixed with mixer or egg beater, but mash banana and fruit before adding remaining ingredients.)
Pour into ice cube tray or 9x5-inch loaf pan. Freeze until firm but not solid (1 1/2 to 2 hours).
Place in bowl and beat until creamy. Return to freezer container, cover and freeze until firm, 5 to 6 hours.
Allow to soften slightly before serving.
Makes 6 servings (1/2 cup each)

Notes

*If desired use fruit-flavored yogurt and decrease honey to 2 tablespoons.

Or to make in Ice Cream Machine: Combine all ingredients place in ice cream freezer and freeze according to manufacturer's directions.

Fruit Kebabs with Yogurt Dip

3/4 cup plain yogurt
2 tablespoons confectioner's sugar
1 tablespoon lemon juice
1 tablespoon seedless grapes
1 cup pineapple cubes
3/4 cup strawberries
1 orange, peeled, sectioned
1/2 cup fresh blueberries

Instructions

To prepare fruit dip, put yogurt, confectioner's sugar and lemon juice in a small mixing bowl. Blend ingredients with a mixing spoon until mixture is smooth. Chill until serving time.
Pierce fruit onto wooden skewers, alternating types of fruit for a colorful mix.
Spoon dip into a serving platter bowl and place at center of serving platter, then arrange skewers around bowl.

Ingredients

Cucumber and Sour Cream Dressing

1/2 cucumber, peeled, seeded and grated
1/4 teaspoon salt
Dijon style mustard
1 tablespoon vinegar
salt and pepper to taste
1/2 cup sour cream
1/4 cup plain yogurt
1 tablespoon snipped fresh dill

Instructions

In a small sieve set over a bowl, toss cucumber with salt and let drain 10 minutes.
In a blender, blend mustard, salt and pepper to taste. Add sour cream, yogurt and fresh dill. Blend the mixture, scraping down the sides until it is smooth. Add the cucumber and blend until combined.

Indian-Style Samosas

1 onion, finely chopped
2 cloves garlic, chopped
3 serrano chiles, stems removed, chopped
1 tablespoon chopped ginger
2 tablespoons vegetable oil
1/3 to 1/2 cup plain yogurt
2 small potatoes, boiled and cut into 1/2 -inch cubes
1/2 cup frozen peas, defrosted or if using fresh, cooked
1 tablespoon curry powder
1 teaspoon fennel seeds
1/2 teaspoon ground cayenne
1/4 teaspoon cumin seeds
1 tablespoon chopped fresh mint or cilantro
1 tablespoon lemon juice, fresh preferred
Salt to taste
Ready Samosa Pattis (available in Indian Stores)
Oil for frying

Instructions

In a heavy skillet or wok, heat the oil and saute the onion, garlic, serrano, and ginger until the onion is translucent, about 3 minutes. Stir in the yogurt. Add the potatoes and peas, curry powder, fennel seeds, cayenne, and cumin seeds and continue to cook for an additional 5 minutes, stirring occasionally. Add the mint and lemon juice, stir well and salt to taste.
Cool slightly before filling the samosas.
Yield: 2 to 2 1/2 cups

Fill the Samosa Pattis

Take the thawed Samosa Pattis and make small cones out them leaving the wide side open. The size of the cone depends on your choice. Maximum recommended size for the cone is 8-10 cm in diameter and the smallest recommended is 5-6 cm in diameter.
Fill the cones with small amounts of potato filling and seal it using water.
At this stage the Samosas can be stored in the freezer and used as required.
Finally you can fry these filled cones in medium-hot oil or bake them in the oven at 400 deg F for about 45 minutes or till it turns light golden brown.
Serve hot with green chutney and tamarind chutney

Lebanese Spicy Filled Cabbage Leaves

This is from an Aussie cookbook, so you will need to add 1 extra teaspoon for every tablespoon mentioned, as our tablespoons are larger than the Canadian, American, British or New Zealand ones.

6 large green cabbage leaves

Filling:

2 teaspoons olive oil
4 spring onions — finely chopped
1 clove garlic — crushed
2 tablespoons tomato paste (*)
1/2 cup currants
2 tablespoons slivered almonds (*)
1 teaspoon cumin seeds
1/2 teaspoon ground cinnamon
2 tablespoons finely chopped fresh parsley (*)
2 1/2 cups cooked long-grain rice
1 cup vegetable or chicken stock

Yogurt Sauce:

3/4 cup plain yogurt
1 teaspoon ground cumin
1 tablespoon finely chopped fresh mint. (*)

Instructions

Preheat oven to 190°C (375° F.) Brush a deep casserole dish with melted butter or oil.
Blanch cabbage leaves in boiling water for 10 seconds or until soft and pliable. Drain, remove and discard the hard stalk from the leaves. Set leaves aside.

To make filling:

Heat oil in a large pan. Cook spring onions and garlic over medium heat for 30 seconds. Add tomato paste, currants, almonds, cumin seeds, cinnamon, parsley and rice. Stir until well combined. Remove from heat and cool slightly.
Place 3 tablespoons of filling onto the edge of one cabbage leaf. Roll into a neat parcel, folding in the edges while rolling. Repeat with the remaining filling and cabbage leaves. Place cabbage parcels, flap side down, in the prepared dish. Pour over the vegetable or chicken stock. Cover with lid or foil and bake in preheated oven for 20 – 25 minutes or until heated through.

To make yogurt Sauce:

Make the Yogurt Sauce just prior to serving.
Mix together yogurt, ground cumin and chopped fresh mint in a bowl
Serve cabbage rolls, warm or cold with Yogurt Sauce and garnish with sprigs of fresh mint or coriander.

Ingredients

1 pound minced lamb
2 tablespoons falafel mix
1 medium-size onion, finely chopped
1 garlic clove, crushed
2 tablespoons chopped fresh cilantro leaves
1 teaspoon finely grated fresh ginger
1 teaspoon salt
1 teaspoon curry powder
1/4 cup plain yogurt, lightly beaten

Instructions

Skewers, square in cross section to avoid meatballs slipping off
Combine all the ingredients except yogurt in a mixing bowl. Mix and knead until the mixture is smooth.
Form the mixture into balls or sausage shapes and thread onto the skewers. Coat the meatballs with the yogurt. Grill the meatballs until evenly browned and all pink has disappeared.
Serve with rice, Indian bread and a vegetable curry.
Makes 4 to 6 servings

4-6 pounds country-style spareribs
1 (6 ounce) can frozen pineapple juice concentrate, thawed
1 small onion, minced
2 tablespoons soy sauce
1/2 cup plain yogurt

Instructions

Preheat oven to 350° F.
Place spareribs in a shallow baking pan, and cover with aluminum foil. Bake for 50 minutes. Remove foil and drain excess fat. Bake 20 more minutes or until tender.
In a small bowl, combine pineapple juice concentrate, onion, soy sauce, and yogurt.
Brush ribs with half of the sauce. Bake for 7 minutes. Turn ribs and brush with remaining sauce. Bake 7 more minutes.

1 cup sliced ripe strawberries
1 cup plain yogurt
1/2 cup sifted powdered sugar
1 teaspoon vanilla

Instructions
