Peanut Butter Oatmeal Cookies
Ingredients
Peanut Butter Oatmeal Cookies
- 1 cup margarine
- 1 cup peanut butter
- 1 cup granulated sugar
- 1 cup firmly packed brown sugar
- 2 eggs, beaten
- 1 teaspoon vanilla
- 2 cups quick-cooking rolled oats
- 1 and 1/4 cups unsifted all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- Preheat oven to 350°.
- In a large bowl, beat together margarine and peanut butter until smooth. Beat in the sugars until smooth, then beat in the eggs and vanilla.
- In a small bowl, blend together remaining ingredients and add them, a little at a time, to the peanut butter mixture.
- Drop the dough by rounded teaspoonfuls on ungreased baking sheets. Bake 12 minutes, or until lightly browned.
- Remove from baking sheets and cool completely on wire racks.
- Store in tightly covered containers or freeze.
- Makes 6 dozen small cookies
