Honey Bee Cookies

Ingredients

    Honey Bee Cookies
  • 1/2 cup butter, softened
  • 1/2 cup packed brown sugar
  • 1/2 cup honey
  • 1 egg
  • 1 1/2 cups flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon

Heat oven to 375°.

Beat butter, brown sugar, honey and egg in medium bowl on medium speed, scraping bowl constantly, until smooth. Stir in remaining ingredients.

Drop dough by teaspoonfuls onto ungreased cookie sheet.

Bake until set and light brown around edges (surfaces of cookies will appear shiny), 7 to 9 minutes. Let stand 3 to 5 minutes before removing from cookie sheet. Cool on wire rack.

    Pear-Cinnamon Streusel Squares
  • 2 cups all-purpose flour
  • 1 1/4 cups quick-cooking rolled oats
  • 3/4 cup packed brown sugar
  • 2 teaspoons ground cinnamon
  • 1 cup butter
  • 2 eggs
  • 1 cup granulated sugar
  • 2 tablespoons all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups peeled and chopped pears or apples
  • 3/4 cup cinnamon-flavor pieces
  • Powdered Sugar Icing

Preheat oven to 350°F. Lightly grease a 13x9x2-inch baking pan; set aside.

In a large bowl, stir together the 2 cups flour, oats, brown sugar, and cinnamon. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Remove 1-1/2 cups of the oats mixture for topping; set aside. Press the remaining oats mixture evenly into the bottom of the prepared baking pan. Bake for 15 minutes.

Meanwhile, for filling, in a medium bowl, combine eggs and granulated sugar. Stir in the 2 tablespoons flour, baking powder, and salt. Stir in pears and cinnamon pieces. Spread filling evenly over hot crust. Sprinkle with the reserved oats mixture.

Bake for 30 to 35 minutes more or until top is golden. Cool in pan on a wire rack. Cut into bars. Drizzle with Powdered Sugar Icing.

Makes 32 bars.

  • 1 1/2 cups white whole-wheat flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon crumbled dried sage
  • 3/4 cup plus 2 tablespoons old-fashioned rolled oats, divided
  • 2 tablespoons grated extra-sharp cheddar cheese
  • 1 1/2 cups buttermilk
  • 1/3 cup packed brown sugar
  • 1 large egg, lightly beaten
  • 4 tablespoons unsalted butter, melted and cooled
  • 3 ounces Canadian bacon, diced
  • cooking spray

Preheat oven to 375°F.

In a medium bowl, whisk together flour, baking soda, salt, cinnamon and sage.

In a small bowl, combine 2 tablespoons of the oats with cheese.

In a large bowl, stir together buttermilk and remaining oats and let stand for 5 to 10 minutes to let the oats soften.

Stir in brown sugar, egg and butter until combined. Add dry ingredients and stir just until moistened; fold in diced bacon.

Evenly divide the batter between the wells of a 12 cup muffin tin lightly coated with nonstick spray. Sprinkle tops with oat-cheese mixture.

Bake until lightly browned and a toothpick placed in the center comes out with a few moist crumbs attached, about 18 to 20 minutes. Remove and let stand for 5 minutes before transferring the muffins to a wire rack. Serve warm.

Boil 2 cups water in a medium saucepan; stir in oats and butter. Boil, stirring constantly, 1 minute. Remove from heat; let cool to 110º F.

Beat oat mixture, yeast mixture, flour, salt, and brown sugar on medium with a mixer until smooth. Turn out onto a lightly floured surface; knead dough until smooth and elastic, about 5 minutes. Cream together the first 6 ingredients in a large bowl. Stir in baking soda, vanilla, and oats. Stir in chocolate chips and M & M’s, and optional ingredients, if using.

Drop by spoonful (however large you want) onto a lightly greased cookie sheet. Press to flatten slightly. Bake in preheated 350° oven for 15 minutes. Let stand on cookie sheet for a minute or two, and then transfer to an air-tight container.

Notes: Do not over-bake. They may look like they are not done after 15 minutes, but trust me, they are, and they will be the most moist cookie you have ever baked.

  • 4 large eggs
  • 2/3 cup vegetable oil (or corn or canola oil)
  • 1/3 cup water
  • 1 8 ounce container sour cream
  • 1/2 cup firmly packed brown sugar
  • 1 teaspoon ground cinnamon
  • 2/3 cup chopped pecans
  • 1/3 cup honey
    Glaze:
  • 1 cup sifted powdered sugar
  • 2 tablespoons milk
  • 1/2 teaspoon vanilla extract

Preheat oven to 350° F. Grease and flour a 9 X 13 inch baking pan.

Combine first 5 ingredients in a mixing bowl; beat at electric mixer’s medium speed until smooth. Set aside.

In another bowl, combine brown sugar, cinnamon, and pecans; set aside.

Pour half of batter into greased and floured baking pan. Sprinkle half of sugar mixture over batter. Drizzle the honey over sugar mixture. Pour remaining batter on top of honey and underlying sugar mixture. Gently swirl batter with knife.

Bake for 30-35 minutes or until a wooden toothpick inserted in center comes out clean. Remove from oven.

To make glaze:

Combine all ingredients; beat at medium speed until smooth. Drizzle glaze over cake and cool. Cut into squares.

Makes 8-12 servings.
