Chicken, Fruit and Curry Salad

Ingredients

    Chicken, Fruit and Curry Salad
    Salad:
  • 4 cups diced cooked chicken
  • 2 cups grated coconut
  • One 5 1/2-ounce can pineapple chunks, cut in half
  • 2 cups halved grapes (seeds removed if necessary)
  • 1 cup sliced water chestnuts
  • 1 small can cashews (optional)
  • 1 small can smoked almonds, cut in half
    Dressing:
  • 1 1/2 cups mayonnaise
  • 1 teaspoon curry powder (or more to taste)
  • 1 tablespoon lemon juice
  • 1 tablespoon soy sauce

To make the salad, put the chicken, coconut, pineapple chunks, grapes, and water chestnuts in a large bowl. Toss to mix well.

To make the dressing, mix together the mayonnaise, curry powder, lemon juice, and soy sauce in a small bowl and stir until well blended.

Just before serving, stir the dressing into the salad to blend evenly. Add the cashews, if using them, and the almonds, and mix.

Ingredients

    Orange Squares
  • 2 1/4 cups all-purpose flour
  • 1/2 cup ground almonds
  • 1/2 cup confectioners' sugar
  • 1 tablespoon fresh orange zest, divided
  • 1 cup butter
  • 1 3/4 cups sugar
  • 4 eggs
  • 1/3 cup fresh orange juice
  • 1/2 teaspoon orange extract
  • 1/2 teaspoon baking powder
  • confectioners' sugar

Preheat oven to 350°F.

In a large bowl, combine 2 cups flour, almonds, 1/2 cup confectioners' sugar, and 1 teaspoon orange zest.

Cut in butter until mixture is crumbly.

Press into bottom of a 13x9x2-inch baking pan.

Bake for 20 minutes, or until lightly browned.

In a medium bowl, whisk together sugar, eggs, orange juice, and extract.

Combine remaining 1/4 cup flour and baking powder and add to sugar mixture, whisking to combine.

Pour over crust.

Bake for 20 minutes, or until set.

Sprinkle with confectioners' sugar, if desired.

Cut into squares to serve.

    Nectarine Jammy Crumb Squares
  • 1 cup + 1/4 cup all purpose flour
  • 1/2 cup + 1/4 cup light brown sugar
  • 1/2 teaspoon salt
  • 1 stick + 2 tablespoons salted butter, cold and diced
  • 1 egg yolk
  • 1/2 teaspoon vanilla extract
  • 1 cup nectarine jam or your favorite jam
  • 1 tablespoon slivered almonds
  • 2 tablespoon pecans, chopped
  • 2 tablespoons walnuts, chopped

Preheat oven to 380°F.

In a bowl, mix 1 cup flour, 1/2 cup sugar, and salt.

Add 1 stick of butter and use a mixer to work it in. The result should be crumbly.

Add eggs and vanilla and mix until it forms a ball.

Press the dough into a parchment lined 9”x9” baking dish and top with the jam.

In a bowl, using your hands, mix 1/4 cup flour, 1/4 cup sugar, 2 tablespoons butter, and nuts.

Crumble the mixture over the jam.

Bake for about 35–40 minutes, or until golden.

Cool on a wire rack and cut into squares.

Praline Popcorn Crunch

Ingredients

  • 10 cups popped popcorn
  • 1 1/2 cups whole pecans
  • 1/2 cup slivered almonds
  • 1 1/3 cups granulated sugar
  • 1 cup (2 sticks) butter
  • 1/4 cup praline liqueur
  • 1/4 cup light corn syrup
  • 1 tablespoon praline liqueur
  • 1/4 teaspoon salt

Heat oven to 325°F. Butter baking sheet and large bowl.

Toast pecans and almonds until light brown.

Mix popped corn and nuts in a large bowl.

Combine sugar, butter, 1/4 cup praline liqueur and corn syrup in heavy 2 quart saucepan. Cook over medium high heat, stirring occasionally to 275°F. or until small amount dropped into very cold water reaches soft crack stage (separates into hard, but not brittle threads).

Remove from heat, quickly stir in the 1 tablespoon praline liqueur and salt.

Pour over popped corn and nuts mixing until evenly coated. Immediately spread mixture on baking sheet.

Let stand about one hour.

Break into bite-size pieces.

  • 1 tablespoon white vinegar
  • 1/4 teaspoon salt
  • 1 cup sugar
  • 1 teaspoon vanilla extract
  • 8 oz. coarsely chopped and toasted almonds
  • 8 oz. coarsely chopped bittersweet chocolate
Toast the almonds: Spread on a baking sheet. Bake in 350° oven for 10 minutes. Cool and chop.

Reduce oven temperature to 250°

Beat the egg whites with vinegar and salt until slightly stiff. Gradually add the sugar and continue to beat until stiff peaks form. Fold in vanilla, nuts, and chocolate.

Oil a baking sheet or line with parchment paper. Drop the mixture by tablespoons about 2-inches apart on prepared sheets.

Bake 45 minutes. Let cookies cool on baking sheet.

Yields 3 dozen.

  • 1 1/2 pounds assorted baby squash
  • 1/4 teaspoon salt
  • 1/2 cup wasabi peas
  • 3 tablespoons whole almonds
  • 4 catfish fillets
  • 1 teaspoon lemon zest

Heat oven to 450°.

2 rimmed baking sheets lined with foil, place baby squash on one. Coat squash with cooking spray, sprinkle with 1/8 teaspoon salt. Bake on bottom rack 5 minutes.

Pulse wasabi peas and almonds in food processor to chop. Place fish on other sheet, sprinkle with 1/8 teaspoon salt. Top with pea mixture, coat with cooking spray.

Remove squash from oven, toss. Bake squash and fish 10 minutes or until fish is cooked and squash is tender. Toss squash with lemon zest.

  • 1/2 cup milk, scalded
  • 1/3 cup shortening
  • 1/3 cup sugar
  • 1 teaspoon salt
  • 1 package active dry yeast
  • 1/4 cup lukewarm water (110 to 115 degrees F.)
  • 2 eggs
  • 3 1/4 cups sifted flour
  • 1 cup sugar
  • 1 1/4 teaspoons ground cinnamon
  • 6 tablespoons melted butter
  • 1/2 cup toasted slivered almonds
  • 1/2 cup quartered red candied cherries
  • 1/3 cup dark corn syrup

Combine milk, shortening, 1/3 cup sugar and salt in amixing bowl. Cool to lukewarm.

Sprinkle yeast on lukewarm water and stir to dissolve.

Add yeast, eggs and 1 cup flour to milk mixture. Beat with electric mixer at medium speed for 2 minutes, scraping bowl occasionally. Or beat with a spoon until batter is smooth. Gradually add enough flour to make a soft dough that leaves the sides of the bowl.

Place in a greased bowl. Cover and let rise until doubled, about 2 hours. Punch dough down and let rest for 10 minutes.

Turn out onto a floured surface, divide into thirds and cut each third into 12 parts. Shape into balls.

Combine 1 cup sugar and cinnamon. Dips balls in melted butter and then into sugar-cinnamon mixture. Arrange 12 balls in a greased 10-inch tube pan with a solid bottom. (If your tube pan has a removable bottom, cover outside of pan with foil to prevent leaking). Sprinkle with 1/3 of almonds and cherries. Repeat layers twice more.

Mix together corn syrup and remaining butter from dipping balls and drizzle on top. Cover and let rise until doubled, about 1 hour.

Preheat oven to 350 degrees F. Bake for 35 minutes or until done. Cool in pan on rack for 5 minutes, remove from pan and serve warm, top side up.

  • 3 tablespoons orange juice concentrate, thawed
  • 2 tablespoons fresh lemon juice
  • 1/2 cup chicken broth
  • 3 tablespoons Splenda® No Calorie Sweetener, Granulated
  • 1 1/2 teaspoons cornstarch
  • 1 tablespoon unsalted butter
  • 1 tablespoon chopped fresh chives
  • 1 tablespoon chopped fresh parsley

Preheat oven to 425°F.

Place chicken breasts on an ungreased baking sheet. Brush with one tablespoon of orange juice concentrate (reserve remaining concentrate for sauce). Bake in oven 15-20 minutes or until cooked through.
