Ingredients
Salami Scrambled Eggs
- 2 tablespoons vegetable oil
- 1/2 lb. salami, 1/2 inch thick slices
- 1/2 cup assorted bell peppers (green, red, and/or yellow)
- 8 eggs, lightly beaten
- 1/4 teaspoon Italian Seasoning
Instructions
- Heat oil in a heavy nonstick skillet over medium high heat.
- Saute salami and peppers 3-4 minutes, stirring with a wooden spoon until lightly browned.
- Lightly beat eggs with Italian Seasoning, pout over salami and peppers, stir 1 to 2 minutes until just set.
