Rum Raisin Cookies

1 cup raisins
1 teaspoon rum extract
1/2 cup each butter and sugar
1/4 cup brown sugar
1 large egg
1 3/4 cup flour
1/2 teaspoon each baking powder and baking soda
1/8 teaspoon salt

Heat oven to 350°.

Combine raisins and 2 tablespoons water in a microwave bowl, cover with plastic wrap and heat in microwave on high 2 minutes. Stir in rum, set aside.

Beat butter, sugars and egg in bowl until creamy. Combine flour, baking powder, baking soda and salt in a bowl, add to butter mixture, beat well. Stir in raisins. Drop dough by rounded tablespoonfuls onto ungreased baking sheets.

Bake 12 minutes or until light brown. Cool 1 minute. Remove from cookie sheets and cool completely.

Makes 2 dozen cookies.
