Pina Colada Cheesecake

Ingredients
- 1 can flaked coconut, toasted (3.5 oz)
- 1 cup vanilla wafer crumbs (about 26 wafers)
- 1/4 cup margarine or butter, melted
- 3 pkg. cream, cheese, softened, 8 oz. each
- 3 eggs
- 2 tablespoons flour
- 1 can Coco Lopez cream of coconut
- 1/4 cup light rum
- 1 can juice pack crushed pineapple, drained, reserving juice, (8 oz)
- 1 teaspoon cornstarch
Instructions
- Preheat oven to 300°.
- In small bowl, combine coconut, crumbs and margarine; press firmly on bottom of 9 inch springform pan.
- In large mixer bowl, beat cheese until fluffy. Add eggs and flour; beat until smooth. Gradually beat in cream of coconut and then rum.
- Pour mixture into prepared pan. Bake 1 hour and 5 to 10 minutes or until cake springs back when lightly touched or until set.
- Carefully loosen top of cheesecake from edge of pan with knife tip. Cool to room temperature.
- In small pan, combine reserved pineapple juice and cornstarch; cook and stir until slightly thickened. Remove from heat; stir in pineapple. Spoon onto top of cooled cheesecake. Chill.
- Refrigerate leftovers.
- Makes one 9 inch cheesecake.
