Peach Decadence Cheesecake

1/8 cup unsalted butter (melted)
1 1/2 cups White Chocolate Macadamia Nut Cookies (finely chopped)
1/4 cup Macadamia Nuts (finely chopped)
1/4 cup sugar
1/4 cup brandied Palisade Peaches — chopped

Brandied Peaches:
2 cups peeled and sliced freestone peaches
1/4 cup sugar
1/4 cup brandy

3/4 cup Brandied peaches (divided into 1/2 cup and 1/4 cup)
2 lbs Philadelphia Cream Cheese — (softened)
1 cup sugar
4 eggs
1 pinch salt
1 teaspoon peach extract
1/2 teaspoon vanilla extract

Glaze Ingredients:
2 cups sour cream
1/4 cup sugar
1 teaspoon peach extract
4 tablespoons macadamia nuts — (finely copped, 2 Tbsp toasted)

1 cup pureed peaches*

Crust: Preheat oven to 325°. Melt butter and mix crust ingredients. Pat into 9” spring-form pan; sprinkle 1/4 cup-brandied peaches on top of crust. Set aside.

Brandied Peaches: Combine all ingredients in saucepan. Cook over medium heat until peaches become tender (about 10 minutes). Remove from heat and completely cool.

Filling: Mix cream cheese and sugar at medium speed in mixer. Add eggs, one at a time. Add extracts and salt. Carefully mix in 1/2 cup brandied peaches. Pour into spring-form pan, bake at 325° for 50 minutes. Shut off oven, let cool in oven for 15 minute. Open door, let cool for an additional 30 minutes and sprinkle with another 1/4 cup brandied peaches.

Glaze Ingredients: Mix sour cream, sugar, 1 tablespoons macadamia nuts and spread over top. Chill in refrigerator for at least 4 hours (preferably overnight)

Sauce: De-pan cheesecake and drizzle with pureed peaches. Sprinkle 2 tablespoons toasted macadamia nuts over top.

*Peach puree Blanch 2 lbs Palisade Peaches (preferably freestone) for 1 minute in boiling water. Transfer immediately to an ice water bath. Peel cooled peaches. Simmer blanched peaches in 5 1/4 cups water, 2 1/2 cups sugar, 2 tablespoons lemon juice, 1 teaspoon vanilla extract and 1 teaspoon grated ginger until soft. Puree in blender and strain.
