Papaya Bread

1 cup shredded firm papaya
1/2 cup butter
2/3 cup sugar
2 eggs
1 1/2 cups flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon allspice
1/2 teaspoon nutmeg
1/2 cup raisins
1/4 cup walnuts, chopped (optional)
Shred papaya, drain well on paper towel and set aside.
Cream butter and sugar; add eggs and mix.
Combine flour and spices and mix into the creamed mixture. Stir in the papaya, raisins and walnuts.
Pour into greased and floured 8 1/2 x 4 1/2 x 3 inch loaf pan.
Bake at 350° for 1 hour and 10 minutes. Cool 10 minutes and remove from pan.
Makes 1 loaf.
