Pacific Rim Cole Slaw

Ingredients
- 1/2 cup rice vinegar
- 1/2 cup peanut oil OR vegetable oil
- 1/3 cup creamy peanut butter
- 2 1/2 tablespoons soy sauce
- 2 1/2 tablespoons brown sugar packed
- 2 tablespoons ginger minced fresh
- 1 tablespoon garlic minced fresh
- 1 lb. cole slaw mix package
- 15 oz. broccoli slaw mix package
- 6 green onions trimmed sliced diagonally
- 1/2 cup cilantro chopped fresh
- 1/2 cup peanuts chopped
Instructions
- Whisk together rice wine vinegar, oil, peanut butter, soy sauce, brown sugar, ginger, and garlic; set aside.
- In a large salad bowl, toss together slaw mixes, onions, cilantro, and peanuts.
- Pour prepared dressing into salad bowl and stir to coat.
- Serves: 12-16
