Ingredients

  • 1/2 cup rice vinegar
  • 1/2 cup peanut oil OR vegetable oil
  • 1/3 cup creamy peanut butter
  • 2 1/2 tablespoons soy sauce
  • 2 1/2 tablespoons brown sugar packed
  • 2 tablespoons ginger minced fresh
  • 1 tablespoon garlic minced fresh
  • 1 lb. cole slaw mix package
  • 15 oz. broccoli slaw mix package
  • 6 green onions trimmed sliced diagonally
  • 1/2 cup cilantro chopped fresh
  • 1/2 cup peanuts chopped

Instructions

  • Whisk together rice wine vinegar, oil, peanut butter, soy sauce, brown sugar, ginger, and garlic; set aside.
  • In a large salad bowl, toss together slaw mixes, onions, cilantro, and peanuts.
  • Pour prepared dressing into salad bowl and stir to coat.
  • Serves: 12-16
