Ingredients
Multi-Grain Cornbread
- 3/4 cup corn meal
- 1/2 cup oat flour
- 1/2 cup rye flour
- 1/2 cup barley flour
- 1/2 cup brown rice flour
- 1 tablespoon sugar or other granular sweetener
- Pinch of salt
- 2 cups lite soy milk
- 2 tablespoons oil
Instructions
- Heat oven to 400°. Grease an 8-inch round or square baking pan.
- In large bowl, stir together flours, sugar, and salt. Stir in soy milk and oil until a soft batter forms.
- Pour batter into greased pan and bake about 20 minutes, or until knife inserted in center comes out clean.
- Serve warm or at room temperature.
