Ingredients
Moist Banana Bread
- 2 cups sifted flour
- 1 teaspoon baking soda
- 3/4 teaspoon salt
- 3/4 cup butter, room temperature
- 1 1/2 cups sugar
- 2 eggs
- 1 cup mashed bananas
- 1 teaspoon vanilla
- 1/2 cup buttermilk
- 3/4 cup chopped nuts (walnuts or pecans)
Instructions
- Preheat oven to 325°F. Grease a 9x5x3-inch loaf pan and line bottom with waxed paper.
- Sift together flour, baking soda and salt.
- Cream together butter and sugar in a mixing bowl until light and fluffy. Add eggs, one at a time, beating well after each addition. Blend in bananas and vanilla. Add dry ingredients alternately with buttermilk to creamed mixture, beating well after each addition. Stir in chopped nuts.
- Pour batter into prepared pan and bake for 1 hour 15 minutes or until bread tests done.
- Cool in pan on wire rack for 10 minutes. Remove from pan and cool completely. Wrap loaf in aluminum foil and let stand 24 hours for easier slicing.
