8 cups finely chopped green tomatoes
4 cups finely chopped apples
3 cups raisins
1/2 cup chopped candied mixed peel
1 cup packed brown sugar
1-1/2 cups white sugar
1 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ground cloves
3/4 teaspoon allspice OR ground nutmeg
1/3 cup apple cider vinegar or white vinegar
2 tablespoons lemon juice
1 cup apple juice or water
1/2 cup brandy (optional)
Combine all ingredients, except brandy, in a large saucepan. Bring to a boil, over medium heat, then reduce heat and simmer, stirring frequently, for two hours.
Remove from heat, stir in brandy, if using, then ladle mincemeat into hot, sterilized canning jars. Store in a cool, dry place.
Makes about 7 cups.
