Half Time Potato Skins

Ingredients
- 6 large baking potatoes
- Crisco® Original No-Stick Cooking Spray
- 2 cups Cheddar cheese shredded
- 12 tablespoons Sour cream
- 9 strips bacon cooked and crumbled
- 3 green onions thinly sliced
Instructions
- Heat oven to 400°F
- Bake potatoes until soft. You can prebake by putting in the microwave for 5 minutes to speed up cooking time.
- When potatoes are done, remove from oven and let cool for about an hour.
- Lower oven to 375°F.
- While potatoes are cooling, fry the bacon. (This can also be broiled, or microwaved).
- Cut baked potatoes in half lengthwise; scoop out centers, leaving 1/4-inch thick shells (reserve centers for another use).
- Place shells, cut side up, on a baking sheet; spray with no-stick cooking spray.
- Bake 20 minutes or until edges are golden brown and crisp. Divide cheese evenly between potatoes; broil until cheese is bubbly and melted, about 2 minutes.
- Top each potato shell with a dollop of sour cream, crumbled bacon, and green onion slices.
- 12 potato halves
