Ingredients
- 1 1/3 cups buttermilk, low fat
- 3/4 cup All Bran cereal
- 3/4 cup bran, 100%
- 2 1/2 cups all purpose flour
- 1/2 cup Splenda
- 4 teaspoons baking powder
- 2 teaspoons baking soda
- 1/4 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/2 cup applesauce, unsweetened
- 1/4 cup molasses, light
- 1 teaspoon vegetable oil
- 1 egg
- 1 teaspoon vanilla extract
- 1/3 cup raisins
Instructions
- Preheat oven 375°F. Lightly coat 16 muffin cups with cooking spray or line with paper liners.
- In a large mixing bowl combine buttermilk with All Bran and 100% bran. Let stand for 10 minutes.
- In a separate bowl, stir together the flour, Splenda, baking powder, baking soda, cinnamon & salt. Stir applesauce, molasses, vegetable oil, egg & Vanilla into the bran mixture. Mix well.
- Make a well in the center of the flour mixture, pour in the applesauce/bran mixture and currants. Stir just until combined.
- Spoon batter into prepared muffin cups. Bake for 25 minutes.
- Makes 16 muffins
