Cinnamon Apple Cake

Ingredients
- 2 cups flour sifted
- 2 teaspoons baking soda
- 1 teaspoon salt
- 2 teaspoons ground cinnamon
- 4 cups apples diced pared
- 2 cups sugar
- 1/2 cup cooking oil
- 2 large eggs
- 2 teaspoons vanilla
- 1 cup walnuts chopped
- confectioners' sugar for dusting
Instructions
- Preheat oven to 350 °F. Grease a 13x9x2-inch baking pan.
- Sift together flour, baking soda, salt and cinnamon.
- Combine apples and sugar in mixing bowl and mix well. Add oil, eggs, vanilla and walnuts and mix well. Stir in dry ingredients.
- Turn batter into prepared pan and bake for 1 hour or until cake tests done. Cool in pan on rack. When still slightly warm, dust with confectioners' sugar.
