Ingredients
Cheesy Frittata
- 2 tablespoons butter or margarine
- 1/2 pound mushrooms, sliced or diced
- 1 – 1 1/2 cups chopped broccoli
- 1 cup diced ham
- 1/4 cup finely chopped onion
- 6 medium eggs
- 1/3 cup water
- 1/3 cup milk
- 2 cups shredded cheddar and jack cheese
- Salt & pepper to taste
Instructions
- Melt butter in a large skillet. You will need a large, deep non-stick skillet with a lid. Add broccoli and onions and allow to cook for about 5 minutes, adding the mushrooms and ham after about 3 minutes.
- In a bowl, combine eggs, water and milk, and a sprinkling of salt and pepper if desired. Beat or whisk lightly. Stir in 1-1/2 cups of the cheese and then add it all to the pan. Sprinkle with salt and pepper.
- Cover and cook over medium heat 10-15 minutes until the eggs are set.
- A few minutes before it’s ready, sprinkle the remaining 1/2 cup of cheese over the top. Allow the cheese to melt and the eggs to finish setting up, and then remove from heat.
- Serve in a large pie dish or plate, cut into wedges.
