Ingredients

Herbed Russet Potatoes

6 medium russet potatoes, washed, unpeeled, and cut in half lengthwise
1 tablespoon olive oil
1 tablespoon white wine
2 tablespoon low-fat, low-sodium chicken broth
2 teaspoons minced fresh thyme
1 teaspoon minced fresh rosemary
fresh ground pepper to taste

Instructions

Add the potatoes to a large pot of boiling water and boil for about 10-15 minutes, just until potatoes are slightly tender and not too soft. Drain.
In a large glass dish, combine the remaining ingredients. Add the potatoes and marinate for 30 minutes.
Prepare an outside grill with an oiled rackset 4 inches above the heat source. On a gas grill, set the heat to high. Grill each potato half directly on the rack or in an oiled, wire-hinged vegetable basket, turning constantly, for 15-17 minutes until the potatoes are cooked through.

1 teaspoon salt

Instructions

Ingredients

Wonderful Stuffed Potatoes

4 medium baking potatoes
3/4 cup low-fat (1%) cottage cheese
1/4 cup 1% milk
1 teaspoon dill weed
3/4 teaspoon herb seasoning
4-6 drops hot pepper sauce
2 teaspoon grated parmesan cheese

Instructions

Prick potatoes with fork. Bake at 425° F for 60 minutes or until fork is easily inserted.
Cut potatoes in half lengthwise. Carefully scoop out potato leaving about 1/2 inch of pulp inside shell.
Mash pulp in large bowl. Mix in by hand remaining ingredients except parmesan cheese. Spoon mixture into potato shells.
Sprinkle each top with 1/4 teaspoon parmesan cheese.
Place on baking sheet and return to oven. Bake 15-20 minutes or until tops are golden brown.
Serves: 8

Shrimp Stuffed Potatoes

6 large Idaho potatoes
8 tablespoons butter
2 cups grated cheddar cheese, plus more for sprinkling
2 cups grated Monterey Jack
2 cups sour cream
1 pound shrimp, peeled and sauteed
Vegetable oil, for coating
Salt and pepper
Paprika

Instructions

Preheat oven to 350°.
Begin by washing potatoes, drying them, and gently pricking them with a fork on the sides. Coat each potato with vegetable oil, place on foil covered pan, and bake for approximately 1 hour.
Place the butter in a large bowl. Remove the potatoes from the oven and slice each potato in half. Gently scoop out the potato and place in the bowl. Using a mixer on high, mix the potatoes, butter, sour cream, salt, and pepper. Fold the shrimp and both cheeses into the mixture.
Gently stuff the mixture back into the potato shells, making sure not to break them.
Pile the mixture as high as you can on top of the potato shells. Sprinkle each potato with cheese and paprika for color.
Bake in the oven for approximately 20 to 30 minutes until browned on top.
Yield: 6 servings

8 small new potatoes (3/4 lb.), about 1-1/2 inches in diameter
1/2 cup water
4 slices Oscar Mayer Center Cut Bacon
2 tablespoons Kraft Zesty Italian Dressing
1/2 cup Kraft Shredded Sharp Cheddar Cheese

Instructions

Place potatoes and water in 2-qt. microwaveable dish.
Microwave, uncovered, on High 10 minutes or until potatoes are tender. Let stand 5 minutes.
Meanwhile, cook bacon in large nonstick skillet on medium heat 8 to 10 minutes or until crisp, turning frequently. Drain on paper towels.
Drain potatoes; place on work surface. Press each potato with bottom of small bowl or saucer to flatten to 1/2-inch thickness.
Heat dressing in skillet on medium heat. Add potatoes; cook 4 minutes or until bottoms are golden brown.
Meanwhile, crumble bacon.
Turn potatoes over; sprinkle evenly with cheese and bacon. Cover skillet with lid. Cook an additional 2 minutes or until cheese is melted.

Ingredients

Potato and Mushroom Gratin

2 cups whole milk
1 cup heavy cream
4 cloves garlic
6 sprigs fresh thyme
1 bay leaf
dash of salt and pepper to taste
3 lbs red potatoes, cleaned and sliced paper thin
1 lb shiitake mushrooms, stems removed, caps thinly sliced
1 lb portobello mushroom caps, thinly sliced
1/4 cup butter
2 tablespoons dried parsley
1/4 cup chopped chives
1/4 cup freshly grated parmesan cheese
2 cups smoked cheddar cheese, grated

Instructions

Preheat oven to 350°.
Combine milk, cream, garlic, thyme, and bay leaf in a small saucepan over medium heat. Bring to a simmer and remove from heat. Cover and set aside to steep for 30 minutes.
Melt butter over medium-high heat in a large saute pan or wok. Cook mushrooms, in batches if necessary, until they are soft and most of their juices have been expressed and evaporated. Season with salt and pepper; set aside.
Grease a large casserole dish.
Create three complete layers of the gratin: potatoes, parsley, chives, parmesan, mushrooms, cheddar.
Strain the infused milk and pour over the potatoes, squeezing the layers with another casserole dish or a large spatula to evenly distribute the liquid. Cover and bake for 90 minutes.
Uncover and bake for an additional 15 minutes, or until top is brown.
Let stand for 30 minutes before serving.
Serves 6-8.

12 new potatoes, cut in half or quartered depending on size
3 tablespoons olive oil
2 cloves garlic, coarsely chopped
dash of salt and freshly ground pepper

Instructions

Preheat oven to 400°F.
Rinse, dry, and thinly slice the potatoes.
Butter a large, shallow ovenproof dish; melt the remaining butter in a small pan. Put a layer of potatoes in the bottom of the dish. Drizzle a little butter over and season lightly with salt and pepper. Repeat these layers, finishing with butter.
Cover and cook in a preheated 400°F oven for 1 hr.
Sprinkle with chopped parsley and serve from the dish.

1/4 cup chives
1 clove garlic — minced
1 teaspoon salt
