Mallow Valentine's Day Cookies

Ingredients

    Mallow Valentine's Day Cookies
  • 1 pkg. (20 oz.) refrigerated sliceable sugar cookies
  • 12 Jet-Puffed Marshmallows
  • decorating icing

Preheat oven to 350°F. Roll out cookie dough to 1/8-inch thickness on lightly floured surface. Cut into 24 cookies, using 2- to 3-inch heart-shaped cookie cutters, rerolling dough scraps as necessary. Place, 2 inches apart, on ungreased baking sheets.

Bake 7 to 9 minutes or until lightly browned. Cool 1 minute; remove from baking sheets to wire racks. Cool completely.

Top bottom side of each of 12 of the cookies with 1 marshmallow. Place 4 of the cookies on microwavable plate. Microwave on high 15 to 20 seconds or until marshmallows begin to puff; cover with 4 of the remaining cookies, bottom sides down, to make sandwiches. Repeat with remaining cookies and marshmallows. Decorate with icing as desired.

Ingredients

    Sweetheart Tart
  • 1/2 pkg. Pepperidge Farm Frozen Puff Pastry Sheets (1 sheet)
  • 3 tablespoons sugar
  • 1 cup heavy cream
  • 1/2 cup confectioners' sugar
  • 1/4 cup unsweetened baking cocoa
  • 1 tablespoon almond-flavored liqueur
  • 1 cup fresh raspberries

Thaw pastry sheet at room temperature 30 minutes. Preheat oven to 400°F. Make a pattern by cutting a piece of paper into a heart 7" long by 7 1/2" wide.

Unfold pastry on lightly floured surface. Roll into 14"x10" rectangle. Use pattern to cut out 2 hearts in pastry sheet. Cut remaining pastry into small hearts, using small cookie cutter. Place pastry hearts on baking sheet. Sprinkle with 2 tablespoons sugar.

Bake 15 minutes or until golden. Remove from baking sheet and cool on wire rack.

Beat cream, confectioners' sugar, cocoa and liqueur in bowl until soft peaks form. Spread chocolate mixture on 1 large pastry heart to within 1/2" of edge.

Arrange 1/3 cup raspberries on chocolate mixture. Top with remaining large pastry heart, sugar-side up. Place tart on serving plate.

Place remaining raspberries and remaining sugar in blender jar. Cover and blend until smooth. Spoon sauce around edge of tart and garnish with small pastry hearts.

Serves 2 to 4.

    Valentine's Cupcakes
  • 3 cups flour
  • 2 cups sugar
  • 1/2 cup cocoa
  • 2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cup water
  • 1/2 cup plus 2 tablespoons vegetable oil
  • 2 teaspoons vanilla
    Frosting:
  • 8 ounce cream cheese; softened
  • 1 egg
  • 1/3 cup sugar
    Valentine Decorations:
  • Lips Puffy Picks
  • Valentine Glitter Ring or similar
  • Small candy hearts, if desired

Preheat oven to 350°F. Line cupcake baking pans with paper cupcake liners.

In large mixing bowl, combine flour, sugar, cocoa, baking soda and salt; set aside.

In second small mixing bowl, combine water, vegetable oil and vanilla. Add contents of small mixing bowl to large mixing bowl and stir with mixing spoon to combine.

Using mixing spoon, ice-cream scoop, or soup spoon, fill cupcake liners half full with cupcake batter.

Wearing oven mitts, place cupcake pans in oven; bake approximately 25 minutes or until done. When done, wear oven mitts to remove pan from oven and turn off oven. Cool completely.

In small mixing bowl, use electric mixer to combine cream cheese, egg and sugar. Using a pastry bag with a star tip pipe frosting onto muffins. Decorate with muffin picks or rings. Sprinkle sides with candy hearts if desired.

Yield: 36 Cupcakes

Ingredients

    Valentine Cherry Kisses Cookies
  • 1 cup butter; (1/2 pound)
  • 1 cup powdered sugar
  • 1 tablespoon maraschino cherry juice
  • 1/2 teaspoon almond extract
  • 2 drops red food coloring
  • 1/4 teaspoon salt
  • 1-1/2 cups unbleached flour
  • 1/2 cups maraschino cherries; drained and chopped
  • 25 Hershey's chocolate kisses; or chocolate hearts

Preheat oven to 350°. Grease 2 cookie sheets.

Cream butter and powdered sugar together in a electric mixer, add cherry juice, almond extract, red food coloring and salt. Beat well. Add flour 1 cup at a time, scraping bowl often. Add cherries and mix only enough to blend. Dough should be stiff.

Roll into 2" balls and press slightly flat on cookie sheets.

Bake 10-12 minutes.

Remove from oven and immediately place an unwrapped Hershey's chocolate kiss, or heart, on the top of each cookie, pressing down with a slight twisting motion.

Cool completely and store in an airtight container.

Marbled Cheesecake Hearts

Ingredients

    Marbled Cheesecake Hearts
  • 2 cups finely crushed creme filled chocolate sandwich cookies
  • 3 tablespoons butter or margarine, melted
  • 3 (8 oz) pkgs cream cheese, softened
  • 14 oz can Eagle Brand sweetened condensed milk
  • 3 eggs
  • 2 teaspoons vanilla
  • 2 (1 oz) squares unsweetened chocolate, melted

Preheat oven to 300°. Line 13 X 9 inch pan with heavy foil, set aside.

Combine crumbs and butter, press firmly on bottom of pan. With mixer, beat cream cheese in a bowl until fluffy. Beat in milk until smooth. Add eggs and vanilla, mix well. Pour half the batter over crust.

Stir melted chocolate into remaining batter, spoon over vanilla batter. With knife, swirl chocolate batter through vanilla batter to marble.

Bake 50 minutes or until set. Cool. Chill 1 hour.

Use foil to lift out of pan.

For hearts, cut with a heart shaped cookie cutter. Or, cut into bars.

Makes 12 hearts.

  • 1 1/2 cups packed brown sugar
  • 3/4 cup butter, melted
  • 1 teaspoon vanilla
  • 3 eggs
  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1/4 teaspoon salt
  • 3/4 cup toasted chopped almonds
  • 1/4 pound white chocolate
  • 1 tablespoon butter
  • 1/2 cup sour cream
  • Unsweetened cocoa powder
  • Sliced almonds

Grease 5 cup heart shaped pan; dust with unsweetened cocoa powder and set aside.

In bowl, blend together brown sugar, butter and vanilla; add eggs, one at a time, beating well with wooden spoon after each addition.

Sift together flour, cocoa and salt; add all at once to creamed mixture, mixing just until blended. Stir in nuts; spread in prepared pan. Loosely cover tip of heart with foil to prevent from drying out.

Bake in 350°F oven for 35 to 40 minutes or until just barely firm to the touch. Let cool in pan for 10 minutes; turn out onto rack and let cool completely.

On top of double boiler over hot, not boiling, water, melt white chocolate with butter. (Alternatively, in microwaveable dish, microwave at Medium/50% for 1 to 2 minutes or until softened.) Remove from heat and let cool slightly; stir in sour cream until smooth and blended.

Refrigerate for 10 minutes; spread smoothly over sides then top of cooled cake. Sprinkle cocoa in attractive pattern on top of cake. Arrange almonds around top edge.

  • 4 squares Baker's Unsweetened Chocolate
  • 3/4 cup (1-1/2 sticks) butter
  • 2 cups sugar
  • 3 eggs
  • 1 teaspoon vanilla
  • 1 cup flour
  • 1 cup coarsely chopped Planters Walnuts
  • 1 cup ready-to-spread vanilla frosting
  • 1/4 cup multi-colored sprinkles

Heat oven to 350°F. Line 13x9-inch pan with foil, with ends of foil extending over sides. Grease foil.

Microwave chocolate and butter in large microwaveable bowl on HIGH 2 minutes or until butter is melted. Stir until chocolate is completely melted.

Add sugar; mix well. Blend in eggs and vanilla. Stir in flour and nuts; spread into prepared pan.

Bake 30 to 35 minutes or until toothpick inserted in center comes out with fudgy crumbs. (Do not overbake.) Cool completely.

Use foil handles to lift brownies from pan to cutting board. Cut into heart shapes with 2-inch cookie cutter. Reserve scraps for snacking or other use. Decorate cutouts with frosting and sprinkles.
