Reese's Chewy Chocolate Cookies

1 1/4 cups butter or margarine softened
2 cups sugar
2 eggs
2 teaspoons vanilla
2 cups unsifted all purpose flour
3/4 cup Hershey's cocoa
1 teaspoon baking soda
1/2 teaspoon salt
2 cups (12 ounce pkg) Reese's peanut butter chips

Cream butter and sugar in large mixer bowl until light and fluffy. Add eggs and vanilla beat well.

Combine flour, salt and baking soda. Gradually blend into cream mixture. Stir in peanut butter chips

Drop by teaspoonfuls onto ungreased cookie sheet. Bake at 350° for 8 to 9 minutes. Don't overbake. Cookies will be soft. Will puff during baking and flatten upon cooling

Cool until set; will take about 1 minute

Makes about 4 and half dozen

1/2 cup butter, softened
1/2 cup packed brown sugar
1/2 cup honey
1 egg
1 1/2 cups flour
1/2 teaspoon baking soda

Heat oven to 375°.

Mallow Valentine's Day Cookies

1 pkg. (20 oz.) refrigerated sliceable sugar cookies
12 Jet-Puffed Marshmallows
decorating icing

Preheat oven to 350°F. Roll out cookie dough to 1/8-inch thickness on lightly floured surface. Cut into 24 cookies, using 2- to 3-inch heart-shaped cookie cutters, rerolling dough scraps as necessary. Place, 2 inches apart, on ungreased baking sheets.

Bake 7 to 9 minutes or until lightly browned. Cool 1 minute; remove from baking sheets to wire racks. Cool completely.

Top bottom side of each of 12 of the cookies with 1 marshmallow. Place 4 of the cookies on microwavable plate. Microwave on high 15 to 20 seconds or until marshmallows begin to puff; cover with 4 of the remaining cookies, bottom sides down, to make sandwiches. Repeat with remaining cookies and marshmallows. Decorate with icing as desired.

Valentine Cherry Kisses Cookies

Ingredients

Valentine Cherry Kisses Cookies

1 cup butter; (1/2 pound)
1 cup powdered sugar
1 tablespoon maraschino cherry juice
1/2 teaspoon almond extract
2 drops red food coloring
1/4 teaspoon salt
1-1/2 cups unbleached flour
1/2 cups maraschino cherries; drained and chopped
25 Hershey's chocolate kisses; or chocolate hearts

Preheat oven to 350°. Grease 2 cookie sheets.

Cream butter and powdered sugar together in a electric mixer, add cherry juice, almond extract, red food coloring and salt. Beat well. Add flour 1 cup at a time, scraping bowl often. Add cherries and mix only enough to blend. Dough should be stiff.

Roll into 2" balls and press slightly flat on cookie sheets.

Bake 10-12 minutes.

Remove from oven and immediately place an unwrapped Hershey's chocolate kiss, or heart, on the top of each cookie, pressing down with a slight twisting motion.

Cool completely and store in an airtight container.

Peanut Butter Honey Cookies

1/2 cup white sugar
1/2 cup butter, softened
2/3 cup honey
2 eggs
1 cup creamy peanut butter
2 1/4 cups all-purpose flour
1/2 teaspoon baking powder

Preheat oven to 350°F.

In a medium bowl, cream together the butter, sugar and honey. Stir in the egg and peanut butter.

Combine the flour and baking powder, mix into the peanut butter mixture.

Shape dough into 1 1/2 inch balls. Place 3 inches apart on cookie sheets. Dip a fork into flour and press deeply across top of each cookie in a crisscross pattern.

Bake for 15 minutes in the preheated oven, until cookies are lightly browned.

Cool on wire racks.

Store in tightly covered container.

1/2 cup granulated sugar
1/2 cup packed brown sugar
1/2 cup butter or margarine, softened
2 eggs
2 1/2 cups all-purpose flour
1 1/2 cups shredded zucchini (about 1 medium)
1/2 cup chopped nuts
1 teaspoon grated lemon peel
1 tablespoon lemon juice
2 teaspoons baking powder
1 teaspoon ground nutmeg
1/4 teaspoon salt

Lemon Frosting

3 cups powdered sugar
1/4 cup butter or margarine, softened
1 teaspoon grated lemon peel
1 tablespoon lemon juice
1 tablespoon water

Zucchini Cookies

Heat oven to 375°F.

Mix sugars, butter or margarine and eggs. Stir in remaining ingredients except Lemon Frosting.

Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake until almost no indentation remains when touched, 8 to 10 minutes; cool.

Frost with Lemon Frosting.

Makes about 5 dozen cookies.

For Carrot Cookies: Substitute shredded carrots for the zucchini.

Lemon Frosting

Mix powdered sugar, butter or margarine and lemon peel. Beat in lemon juice and water. If necessary, stir in additional water, 1 teaspoon at a time, until of spreading consistency.

2/3 cup shortening
1 1/2 cups light brown sugar
1 tablespoon water
1 teaspoon vanilla extract
2 egg
1 1/2 cups all purpose flour
1/3 cups cocoa
1/2 teaspoon salt
1/4 teaspoon baking soda
2 cups candy of your choice (skor bar, snickers, rolo, butterfinger)

Heat oven 375°F.

Beat shortening, brown sugar, water, vanilla at medium speed until well blended.

Stir together flour, cocoa, salt and baking soda; gradually add to sugar mixture, beating at low speed just until blended. Stir in candy.

Drop by rounded tablespoons 2 inches apart onto ungreased cookie sheet.

Bake 7 to 9 minutes or until cookies are set. Cookies will appear soft and moist.

Cool 2 minutes, remove from cookie sheet to cooling rack. Cool completely.

No-Flour Monster Cookies

1 stick butter (1/2 cup)
1 1/4 cups packed brown sugar
1 cup granulated sugar
1 teaspoon light corn syrup
1 1/2 cup peanut butter
3 eggs
2 teaspoons baking soda
1 teaspoon vanilla
4 1/2 cups (uncooked) oatmeal (rolled oats)
2/3 cup chocolate chips
2/3 cup M & Ms candies
Optional:
Coconut
Chopped pecans

Cream together the first 6 ingredients in a large bowl. Stir in baking soda, vanilla, and oats. Stir in chocolate chips and M & M’s, and optional ingredients, if using.

Drop by spoonful (however large you want) onto a lightly greased cookie sheet. Press to flatten slightly. Bake in preheated 350° oven for 15 minutes. Let stand on cookie sheet for a minute or two, and then transfer to an air-tight container.

Notes: Do not over-bake. They may look like they are not done after 15 minutes, but trust me, they are, and they will be the most moist cookie you have ever baked.

Chocolate Covered Cherry Cookies

1 1/2 cups all purpose flour
1/2 cup unsweet cocoa
1/4 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon. salt
1/2 cup (1 stick) butter, softened
1 cup sugar
1 egg
1 tablespoon vanilla
1 10-oz. jar maraschino cherries
1 6-oz. pkg. semisweet chocolate pieces or bits
1/2 cup sweetened condensed milk

In a large bowl, combine flour, cocoa, baking powder, soda and salt.

In a separate bowl, combine butter and sugar on low speed with an electric mixer until fluffy. Add egg and vanilla; beat well. Gradually add dry ingredients to creamed mixture; beat until well blended.

Shape dough into 1″ balls; Press a depression in each one with your thumb; place on ungreased cookie sheet. Bake at 350° for about 10 minutes or until done. Remove a let cool a bit.

Drain the cherries, reserving the juice.

In a small saucepan, combine chocolate pieces and condensed milk. Stir over low heat until melted. Stir in 4 teaspoons of reserved cherry juice.

Put a little of this frosting in center of each cookie; place cherry on top. Spoon about 1 teaspoon of chocolate mixture over each cookie; spread to cover cherry.

Makes about 3 dozen cookies.
