Ingredients

    Garth's Cookie Brittle
  • 1 cup butter -- (2 sticks)
  • 1 1/2 teaspoons vanilla
  • 1 teaspoon salt
  • 1 cup sugar
  • 2 cups flour
  • 1 package semisweet chocolate chips -- (12-ounce)

Preheat oven to 375°F. Cover a 15x10-inch baking pan with parchment paper.

Melt butter and allow to cool for 5 minutes. Add vanilla and salt to cooled butter and stir. Add sugar and stir until mixture is combined and smooth.

Gently add flour and chocolate chips alternately, in small amounts. Fold until evenly incorporated. You do not want the chips to melt.

Place the cookie brittle dough in the center of the prepared pan. Press on the dough to spread evenly until the pan is covered. Bake for 15 to 20 minutes. Do not overcook; the finished product will be light brown when removed from the oven.

Allow to cool for 10 minutes and cut into squares. Makes 48 bars.

Pineapple Squares

  • Pineapple Squares
    For the graham crumb crust
  • 1 2/3 cups graham crumbs
  • 1/3 cup melted butter
  • 3 tablespoons sugar
    For the pineapple frosting center
  • 1/2 cup cream cheese
  • 1/2 cup butter
  • 5 to 6 cups icing sugar
  • 1 teaspoon vanilla extract
  • 3/4 cup finely diced fresh golden pineapple well drained
    Vanilla Whipped Cream for the top
  • 1 cup whipping cream
  • 1 teaspoon vanilla extract
  • 3 tablespoons icing sugar
To prepare the graham crumb base

Measure the graham crumbs into a small bowl and make a small well in the center.

Pour the sugar into the well, then pour the melted butter onto the sugar.

Let this stand for a couple of minutes to let the butter seep into the sugar. Then stir well to combine all ingredients together. The purpose of this step is to get a good contact between the butter and sugar.

Press the crumb mixture firmly into the bottom of a 9x9 inch baking pan that has been lightly greased and lined with parchment paper. (For a thinner version with less frosting at the center you can use a 9x13 inch pan and get 50% more squares too. See NOTE for adjustments below.)

To prepare the pineapple frosting center

Cream together the butter and cream cheese until smooth.

Beat in the vanilla extract.

Slowly start adding the icing sugar a little at a time.

Beat until smooth and the consistency of the frosting is very stiff. Usually you would consider it too stiff to frost a cake at this stage.

Fold in the finely diced pineapple. The pineapple should be drained of all juice. You can let it drain in a colander lined with paper towels.

Spread evenly over the prepared base and chill for several hours or overnight.

To prepare the Vanilla Whipped Cream

Beat together the 3 ingredients until stiff peaks form. Spread evenly over the chilled pineapple frosting layer.

Store in the fridge until ready to cut and serve.

Notes

Since these are very rich cookie squares, You can use the same amount of filling in a 9x13 inch pan if you like. This will make the squares about 1/3 thinner, plus you will get about 1 1/2 times more servings.

Simply increase the bottom and top layers by 1 1/2 times the recipe and leave the filing as it is.

  • 2 cups all-purpose flour
  • 1 1/4 cups quick-cooking rolled oats
  • 3/4 cup packed brown sugar

In a large bowl, stir together the 2 cups flour, oats, brown sugar, and cinnamon. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Remove 1-1/2 cups of the oats mixture for topping; set aside. Press the remaining oats mixture evenly into the bottom of the prepared baking pan. Bake for 15 minutes.

Meanwhile, for filling, in a medium bowl, combine eggs and granulated sugar. Stir in the 2 tablespoons flour, baking powder, and salt. Stir in pears and cinnamon pieces. Spread filling evenly over hot crust. Sprinkle with the reserved oats mixture.

Bake for 30 to 35 minutes more or until top is golden. Cool in pan on a wire rack. Cut into bars. Drizzle with Powdered Sugar Icing.

Makes 32 bars.

In a bowl, using your hands, mix 1/4 cup flour, 1/4 cup sugar, 2 tablespoons butter, and nuts.

Crumble the mixture over the jam.

Bake for about 35–40 minutes, or until golden.

Cool on a wire rack and cut into squares.

  • 24 dried mission figs
  • 1/4 cup canola oil or 1/4 cup melted butter
  • 1/4 cup honey
  • 1/4 cup nonfat milk
  • 1 1/2 cups whole wheat pastry flour
  • 1/2 cup rolled oats

  • 1/4 teaspoon salt

Preheat oven to 350°F .

Put figs in a small saucepan, cover with water, and bring to a boil. Turn off heat and let figs soften for 5-7 minutes. Do not drain.

Lightly coat an 8X8-inch baking pan with cooking spray (or line with parchment paper or nonstick foil). In a small bowl, mix canola oil or butter, honey, and milk. In a medium bowl, combine flour, rolled oats, baking soda, and salt; add wet ingredients, then mix well.

Remove softened figs from water and place in a blender or food processor. Add 3 tablespoons of the rehydrating water and puree until smooth.

Place a little more than half of the oat mixture in the prepared pan and spread evenly across the bottom. Spread figs evenly on top. Add remaining oat mixture on top of fig layer, allowing some of the figs to show through. Pat lightly to flatten.

Bake for 20 minutes.

Remove from oven and cool completely in pan on a wire rack. When cool, cut into 16 squares.

  • 1 1/4 cups packed brown sugar

  • 1 cup flaked coconut
  • 1/2 cup chopped walnuts

  • 2 tablespoons butter

Preheat oven to 350°F (175°C).

In a medium bowl, stir together 1 1/4 cup flour and 1/3 cup brown sugar. Rub in 1/2 cup butter using your hands or a pastry blender. Press into an ungreased 9 inch square pan.

Bake for 15 minutes in the preheated oven, or until lightly browned at the edges. Set aside. In a medium bowl, beat eggs until light. Mix together the brown sugar, flour, baking powder, and salt; stir into the eggs. Mix in the coconut, nuts, and cherries; spread the batter evenly over the baked crust.

Return to the oven, and bake for 25 minutes, or until brown. Set aside to cool. In a small bowl, mix the confectioners' sugar, 2 tablespoons butter, vanilla, and water until smooth. Add more liquid if necessary to make a more spreadable mixture. Spread over cooled bars before cutting into squares.

  • 35 Reduced Fat Nilla Wafers, finely crushed (about 1-1/4 cups)
  • 1/4 cup butter, melted
  • 1 pkg., 8 oz. Philadelphia Neufchatel Cheese, softened
  • 1/2 cup powdered sugar
  • 1 tub, 8 oz. Cool Whip Light Whipped Topping, thawed, divided
  • 2 pkg., 1 oz. each Jell-O Vanilla Flavor Instant Pudding
  • 3 cups cold fat-free milk
  • 1/2 oz. Baker's Semi-Sweet Chocolate, grated
    Banana Foster:
  • 2 tablespoons butter
  • 1/3 cups brown sugar
  • 3 bananas, sliced
  • 2 tablespoons milk
  • 1 tablespoon light rum or 1 teaspoon rum flavoring

Mix wafer crumbs and margarine; press onto bottom of 13x9-inch dish. Refrigerate until ready to use.

Beat Neufchatel and sugar in medium bowl with whisk until blended. Stir in 1-1/2 cups Cool Whip; spread over crust.

Make banana foster filling; melt butter in sauce pan over medium high heat, add brown sugar and cook 1-2 minutes, constantly stirring, add milk, stir. Add bananas, stir to coat, remove from heat and add rum. Light on fire to flambe. If using rum flavoring just stir in. Let cool 10 minutes evenly spread over cream cheese mixture.

Beat pudding mixes and milk with whisk 2 minutes; spread over bananas. Top with remaining Cool Whip and chocolate. Refrigerate 3 hours.
