Reese's Chewy Chocolate Cookies

Ingredients

    Reese's Chewy Chocolate Cookies
  • 1 1/4 cups butter or margarine softened
  • 2 cups sugar
  • 2 eggs
  • 2 teaspoons vanilla
  • 2 cups unsifted all purpose flour
  • 3/4 cup Hershey's cocoa
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups (12 ounce pkg) Reese's peanut butter chips

Cream butter and sugar in large mixer bowl until light and fluffy. Add eggs and vanilla beat well.

Combine flour, salt and baking soda. Gradually blend into cream mixture. Stir in peanut butter chips

Drop by teaspoonfuls onto ungreased cookie sheet. Bake at 350° for 8 to 9 minutes. Don't overbake. Cookies will be soft. Will puff during baking and flatten upon cooling

Cool until set; will take about 1 minute

Makes about 4 and half dozen

  • 1 8-ounce package cream cheese, softened
  • 1/4 cup sugar
  • 1 8-ounce carton lemon yogurt
  • 1-1/2 teaspoons finely shredded lemon peel
  • 3 cups all-purpose flour
  • 1 cup sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground nutmeg or mace
  • 1 cup butter
  • 2 eggs, slightly beaten
  • 1 cup milk
  • 1/2 teaspoon almond extract
  • 1/2 cup sugar
  • 1/2 cup all-purpose flour
  • 1/4 cup butter
  • 1/2 cup chopped pecans or sliced almonds (optional)

Preheat oven to 350°F. Grease a 13x9x2-inch baking pan; set aside.

In a medium mixing bowl beat cream cheese with an electric mixer until fluffy. Beat in 1/4 cup sugar; fold in lemon yogurt and lemon peel. Set aside.

In a large mixing bowl stir together 3 cups flour, 1 cup sugar, baking powder, salt and nutmeg or mace. Cut in the 1 cup butter until mixture resembles fine crumbs. Combine eggs, milk and almond extract. Add to flour mixture, mixing until blended. Spread half of the batter in the prepared pan.

Spoon the cream cheese mixture over the batter. Spoon the remaining batter in small mounds over the cream cheese mixture, spreading out as much as possible.

Combine the 1/2 cup sugar and 1/2 cup flour; cut in the 1/4 cup butter until mixture resembles coarse crumbs. Stir in pecans or almonds. Sprinkle nut mixture over batter in pan.

Bake for 45 to 50 minutes or until cake is golden and toothpick inserted in dough mounds comes out clean (do not test in filling). Cool on wire rack at least 45 minutes before serving.

Chill to store.

Makes 12 servings.

    Garth's Cookie Brittle
  • 1 cup butter -- (2 sticks)
  • 1 1/2 teaspoons vanilla
  • 1 teaspoon salt
  • 1 cup sugar
  • 2 cups flour
  • 1 package semisweet chocolate chips -- (12-ounce)

Preheat oven to 375°F. Cover a 15x10-inch baking pan with parchment paper.

Melt butter and allow to cool for 5 minutes. Add vanilla and salt to cooled butter and stir. Add sugar and stir until mixture is combined and smooth.

Gently add flour and chocolate chips alternately, in small amounts. Fold until evenly incorporated. You do not want the chips to melt.

Place the cookie brittle dough in the center of the prepared pan. Press on the dough to spread evenly until the pan is covered. Bake for 15 to 20 minutes. Do not overcook; the finished product will be light brown when removed from the oven.

Allow to cool for 10 minutes and cut into squares. Makes 48 bars.

  • 1/2 pkg. Pepperidge Farm Frozen Puff Pastry Sheets (1 sheet)
  • 3 tablespoons sugar
  • 1 cup heavy cream
  • 1/2 cup confectioners' sugar
  • 1/4 cup unsweetened baking cocoa
  • 1 tablespoon almond-flavored liqueur
  • 1 cup fresh raspberries

Thaw pastry sheet at room temperature 30 minutes. Preheat oven to 400°F. Make a pattern by cutting a piece of paper into a heart 7" long by 7 1/2" wide.

Unfold pastry on lightly floured surface. Roll into 14"x10" rectangle. Use pattern to cut out 2 hearts in pastry sheet. Cut remaining pastry into small hearts, using small cookie cutter. Place pastry hearts on baking sheet. Sprinkle with 2 tablespoons sugar.

Bake 15 minutes or until golden. Remove from baking sheet and cool on wire rack.

Beat cream, confectioners' sugar, cocoa and liqueur in bowl until soft peaks form. Spread chocolate mixture on 1 large pastry heart to within 1/2" of edge.

Arrange 1/3 cup raspberries on chocolate mixture. Top with remaining large pastry heart, sugar-side up. Place tart on serving plate.

Place remaining raspberries and remaining sugar in blender jar. Cover and blend until smooth. Spoon sauce around edge of tart and garnish with small pastry hearts.

In second small mixing bowl, combine water, vegetable oil and vanilla. Add contents of small mixing bowl to large mixing bowl and stir with mixing spoon to combine.

Using mixing spoon, ice-cream scoop, or soup spoon, fill cupcake liners half full with cupcake batter.

Wearing oven mitts, place cupcake pans in oven; bake approximately 25 minutes or until done. When done, wear oven mitts to remove pan from oven and turn off oven. Cool completely.

In small mixing bowl, use electric mixer to combine cream cheese, egg and sugar. Using a pastry bag with a star tip pipe frosting onto muffins. Decorate with muffin picks or rings. Sprinkle sides with candy hearts if desired.

  • 1 cup powdered sugar
  • 1 tablespoon maraschino cherry juice

  • 2 drops red food coloring

  • 25 Hershey's chocolate kisses; or chocolate hearts

Preheat oven to 350°. Grease 2 cookie sheets.

Cream butter and powdered sugar together in a electric mixer, add cherry juice, almond extract, red food coloring and salt. Beat well. Add flour 1 cup at a time, scraping bowl often. Add cherries and mix only enough to blend. Dough should be stiff.

Roll into 2" balls and press slightly flat on cookie sheets.

Bake 10-12 minutes.

Remove from oven and immediately place an unwrapped Hershey's chocolate kiss, or heart, on the top of each cookie, pressing down with a slight twisting motion.

Cool completely and store in an airtight container.

  • 8 ounces semisweet chocolate, chopped
  • 1 tablespoon shortening
  • 6 ounces cream cheese, softened
  • 1/4 cup butter, softened
  • 1-1/2 cups confectioners' sugar
  • 1/3 cup baking cocoa
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract
  • 2-1/2 cups heavy whipping cream, whipped, divided
  • 1-1/2 cups fresh strawberries, halved

Line a 9-in. heart-shaped or square pan with foil; set aside.

In a large heavy saucepan over low heat, melt chocolate and shortening; stir until smooth. Pour into prepared pan, swirling to coat the bottom and 1-1/2 in. up the sides.

Refrigerate for 1 minute, then swirl the chocolate to reinforce sides of heart or box. Refrigerate for 30 minutes or until firm. Using foil, lift from pan; remove foil and place chocolate heart on a serving plate.

In a large bowl, beat the cream cheese and butter until smooth. Combine confectioners' sugar and cocoa; add to creamed mixture with milk and vanilla. Beat until smooth.

Gently fold two-thirds of the whipped cream into cream cheese mixture. Spoon into heart.

Insert star tip #32 into a pastry or plastic bag; fill with the remaining whipped cream. Pipe around the edge of heart.

Garnish with strawberries.
