Za'atar Aioli

1 large garlic clove -- peeled
1 cup mayonnaise
4 teaspoons fresh lemon juice
1/4 cup extra-virgin olive oil
1/4 cup za'atar -- (spice blend of wild thyme, sesame seeds, and salt)

With machine running, drop garlic through feed tube of processor and chop finely. Add mayonnaise and lemon juice. With machine running, drizzle in oil in thin stream, blending until smooth.

Transfer to small bowl. Whisk in za'atar and season with salt and pepper. Let stand at least 30 minutes to allow flavors to develop.

Do Ahead Can be made 1 day ahead. Cover and chill. Bring to room temperature before using.

Makes about 1 1/3 cups (10 two tablespoon servings)

Za'atar is a Middle Eastern spice mix that includes sesame seeds, sumac, dried thyme, and dried marjoram. It's available at specialty foods stores and Middle Eastern markets.

Yemeni Fire Relish

6 dried chilies -- soaked for at least 1 hour
3 cardamom pods
1 teaspoon caraway seeds
1 teaspoon black peppercorns
1 bunch cilantro -- stemmed and washed
1 bulb garlic -- peeled
1 teaspoon salt

Hilbeh: as above but with the following extras

1 tablespoon fenugreek seed -- soaked for at least 1 hour
1 tablespoon tomato paste

Blend the chilies with the spices, cilantro, garlic, and salt until you obtain a fine paste. Add the fenugreek and tomato paste, if using.

Store in a small jar in the fridge, and use within 2 weeks. Great as a dip for bread, or to spice up soups and pasta.

Makes 2 pints (8 cups or 32 one-quarter cup servings)

Pickled Purple Cabbage

1 medium red onion -- thinly sliced
1/2 cup malted vinegar
1/4 cup canola oil
juice of 1 small lime -- or lemon
1 tablespoon sugar
1 tablespoon chopped fresh basil
1 small jalapeno -- seeded and chopped
1 teaspoon sea salt
1 teaspoon freshly ground pepper
1/2 small head of purple cabbage -- shredded (4 to 5 cups)

In a large bowl, combine the onion, vinegar, oil, lime juice, cane juice, basil, jalapeno, salt and pepper. Stir until the can juice is completely dissolved.

Add the cabbage and stir until it's well coated. Cover and let stand at room temperature for 12 to 24 hours, depending on how strong you want the taste, mixing it once or twice.

Refrigerate until ready to use.

To make a patch of pickled red onions, simply omit the cabbage.

Makes 2 cups

Tomatillo Salsa Verde

1 pound tomatillos
2 small serrano chili peppers
2 cloves garlic, minced
1/4 cup green onions, chopped
1 cup fresh cilantro (coriander) leaves, chopped
2 tablespoons lime juice
1 teaspoon sugar
salt
hot sauce to taste

Remove the husks from the tomatillos and cut each one into quarters.

Coarsely puree uncooked tomatillos, chilies, garlic green onions, cilantro, lime juice and sugar in a blender or food processor. Add salt and hot sauce to taste.

Serve with soft tacos or burritos and as a dip for corn chips.

Makes about 2 cups.
