Zucchini Pineapple Bread

Beat until thick and foamy:
3 large eggs
1 cup corn oil
1 cup light brown sugar
1 cup granulated sugar
2 teaspoons vanilla extract
Stir In:
2 cups shredded zucchini with the skin on
1 – 8 1/2 oz. can crushed pineapple well-drained
3 cups unsifted flour
2 teaspoons baking soda
1 teaspoon salt
1/2 teaspoon baking powder
1/2 teaspoon cinnamon
3/4 teaspoon nutmeg
1 cup golden raisins

Divide mixture between 2 loaf pans sprayed with Pam for baking with flour

Bake at 350°F for 1 hour or until toothpick comes out almost dry.
