1 can (15 oz each) Healthy Choice Zesty Gumbo Soup
1/2 cup Knott’s Berry Farm Orange Marmalade
1/4 teaspoon ground ginger
2 tablespoons chopped La Choy Water Chestnuts, optional
12 wonton wrapper (3.5″ square)
3 teaspoons Pure Wesson Vegetable Oil
Drain liquid from soup into small saucepan; reserve rice/meat/vegetable mixture from soup for later use. Add marmalade and ginger to liquid in saucepan; stir. Bring to a boil over medium-high heat, stirring constantly with wire whisk until marmalade is melted. Reduce heat to low; simmer 5 minutes, or until thickened, stirring occasionally.
Add water chestnuts, if desired, to reserved rice mixture from soup; mix well. Spoon about 1 tablespoon of the rice mixture onto center of each wonton wrapper. Lightly dampen two edges of each wonton. Fold other two edges over rice mixture to form a triangle; sealing edges to completely enclose filling.
Heat medium nonstick skillet over medium-high heat. Add 1-1/2 teaspoons oil; tilt skillet to evenly coat bottom of skillet. Add half of the wontons; cook 2 minutes on each side, or until lightly browned on both sides. Remove wontons from skillet; set aside. Repeat with remaining 1-1/2 teaspoons oil and remaining wontons.
Serve with the orange sauce for dipping.
