2 cups watermelon — seeded and finely — diced (1/4″ dice)
1/4 cup red onion — minced
1/4 cup cilantro — chopped
1 jalapeno — seeded and minced
1 teaspoon honey — optional
1 teaspoon candied ginger root — optional
Blend all ingredients and serve with grilled chicken and rice.
