Turkey Salad

Also known as Autumn Turkey Salad

1/4 cup low-fat mayonnaise
1/2 cup fat-free sour cream
2 teaspoons fresh thyme
2 teaspoons lemon juice
1/2 teaspoon lemon peel
1 pound cooked turkey breast, cut in bite-size pieces
2 celery ribs, thinly sliced
1 apple – peeled, cored, and chopped
1/3 cup dried apricots, chopped
1/4 cup chopped walnuts

In a large bowl, whisk the mayonnaise, sour cream, thyme, lemon juice, and lemon peel until smooth.

Add the turkey, celery, apple, and apricots. Toss gently to coat.

Sprinkle with walnuts.
