2 tablespoons balsamic or red wine vinegar
1 1/2 teaspoons Dijon mustard
3/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1 clove garlic, crushed
1/2 cup olive oil
3 tablespoons chopped fresh tarragon
Combine first 5 ingredients in small bowl. Gradually add oil, beating with a wire whisk until blended. Stir in tarragon.
Serve dressing over salad greens.
Makes 3/4 cup.
