Steakburgers with Mushroom Sauce

1 lb. chopped round or sirloin beef
1 clove garlic, minced
3/4 teaspoon dry mustard
1 tablespoons oil
Salt
Pepper to taste
3 tablespoons butter
1 tablespoon lemon juice
2 tablespoons chopped scallions
3 tablespoons dry white wine
3/4 teaspoon Worcestershire
1/2 lb. mushrooms, sliced

Form chopped meat into 4 burgers. Sprinkle on each side with garlic and mustard. Put oil in large skillet. When very hot, add burgers. Fry over high heat for about 5 minutes or until browned on each side. Transfer burgers to plate. Salt and pepper slightly.

Add butter, lemon juice and scallions to skillet. Bring to boil. Stir. Add wine and Worcestershire and stir. Add mushrooms. Simmer several minutes, stirring constantly until sauce has reduced slightly. Spoon sauce over burgers and serve with bread or for gourmet steak sandwiches, serve burgers between 2 pieces of buttered French bread.
