2 packages frozen chopped spinach
4 tablespoons butter
2 tablespoons chopped onion
2 tablespoons flour
1/2 cup evaporated milk or cream
1/2 teaspoon white pepper
1 teaspoon garlic powder
1 teaspoon celery salt
1 teaspoon Worcestershire sauce
6 ounces roll jalapeno cheese
Cook spinach. Drain and reserve 1/2 cup of liquid.
Melt butter; add onion and saute. Add flour and stir until smooth. Add milk and reserved liquid slowly, stirring constantly until smooth and thick. Add seasonings.
Cut cheese into small pieces and stir into sauce until melted. Add the spinach and mix well.
Turn into a casserole dish and sprinkle with crumbs. Bake at 350°F for 25-30 minutes.
Note: The flavor is improved if casserole is refrigerated overnight before baking.
