Slow Cooker Fruits and Veggies

1/2 butternut squash, peeled, cubed
2 sweet potatoes, peeled, cubed
6 carrots, sliced
2 apples, peeled, sliced
1 cup chopped onion
1 cup chopped dried apricots
1 cup raisins
1/2 cup orange juice
1/4 cup honey
2 tablespoons chopped crystallized ginger
3 teaspoons cinnamon
3 teaspoons pumpkin pie spice
2 teaspoons grated orange peel
1 teaspoon salt
Vanilla yogurt

Place first 7 ingredients in a slow cooker. Combine orange juice and next 6 ingredients in a bowl, pour over top, mix well.

Cook on low for 6 hours or until vegetables are tender.

Dollop servings with yogurt, then serve.

Makes 8 servings.
