1 tablespoon plus 1 teaspoon oil
1/2 lb. salami, 1/2 inch thick, cut into strips
8 eggs, lightly beaten
Heat oil in a heavy nonstick skillet over medium high heat.
Sauté salami strips 3-4 minutes, stirring with a wooden spoon until lightly browned. Add eggs and stir 1-2 minutes, until just set.
