1/2 teaspoon oregano
2 cloves garlic, minced
1/4 teaspoon salt optional
1 lb. boneless pork sirloin roast, fat trimmed
1-1/4 teaspoons virgin olive oil
3/4 onion, chopped
1 cup recipe-ready crushed tomatoes
1/3 cup salsa
2 tablespoons. plus 2 teaspoons cilantro or parsley, chopped
Preheat oven to 350°F.
Rub oregano, garlic, salt and pepper to taste over pork roast. Place in roasting pan. Roast in oven 25-30 minutes per 1 lb., or until meat thermometer registers 160°F internally.
While meat is roasting, heat oil in a heavy saucepan over medium heat. Sauté onion 4-5 minutes or until lightly brown. Stir in tomatoes and salsa and simmer about 5 minutes, stirring frequently.
When pork is done, remove from oven and let stand 5 minutes before slicing.
Serve slices of roast pork with sauce and sprinkled with cilantro.
