Pink Risotto alla Milanese

2 tablespoons butter
1 small onion, finely chopped
1 1/4 cups rice
2 cans (10.5 oz each) chicken broth
1 teaspoon ground turmeric
1 large tomato, peeled, seeded and chopped
Salt and pepper to taste
4 tablespoons grated Parmesan cheese or more to taste

Saute onion in butter until onion is soft. Stir in next 6 ingredients, cover pan and simmer rice for about 30 minutes or until rice is tender and liquid is absorbed. Toss in cheese before serving. Serve with Osso Bucco.
